Beer with a tangy and fruity taste. A slight astringency accentuates its subtlety and its end note.
Long conservation beer, with an evolving taste.

The artwork is provided by the class' children that Jean Van Roy's wife teaches. It changes yearly.

Small white head over well-carbonated, copperish golden beer. Putteke , sulphur, rhubarb is very obvious in the nose. RhubarbΒ², mild acidity, gives an idea of a freshly rained upon kitchen garden. Warming up, classic lambic farmyard aromas appear. Low carbonation, acidthinning but not much -burn. Certain wheatslickness, rhubarb gets stronger in time. Not my top Cantillon, but it's great enough in itself.

2019 version, bottle says 5.5%ABV. Stunning rosy amber with a white head that never disappears. Aroma is woody with rhubarb which seems a bit green at first then is fruitier (and seems baked rather than stewed). Underneath is old lemon, the laundry, vanilla. A sip reveals the full breadth of rhubarb - rich and jammy, floral and almost rosy, astringent, a little of that weird metallic bitterness. Moderately sour and slightly slippery. Dry and oaky at the end. Evocative - doesn't knock you out with the fruit; invites you in. Lovely beer.

Bottle, 2019. Bottled 9th of June 2019. Color: Slightly hazy golden, white head. Aroma: Funk, tart, fruity. Taste: Moderate to over moderate tart, moderate sweet and light bitterness. Barnyard wild yeast funk, fruity rhubarb, notes of tart and sweet grapes and berries. Earthy, minerals. Hay, wheat malt. Oak wood. Smooth and dry mouthfeel. Below average carbonation. Very well balanced, nice complexity. Great.

Poured from tap at the brewery. Pours a lovely light pinkish golden with a light off white head that quickly disappears leaving a thin ring. Aroma is sweet with lemon drops, sweet grain and cereal. Flavor is packed with loads of tart stonefruit. Apricot, and a vegetal flavor that is not off-putting comes in to round out a very unique finish. Lovely stuff.

Bottle shared with Fiona at Cantillon. Pours hazy gold with a decent white head that fades away. Aroma is rhubarb, barnyard funk, oak, the merest hint of raspberry. Taste is a dry, oak rhubarb hit, barnyard sour funk, bit of sweetness from raspberry. Nice and balanced. Lovely stuff

12 January 2020. At In de Verzekering tegen de Grote Dorst. Shared with the lovely Anke! Thanks to the random tourist group for giving a sample. Hazy ochre, very thin, frothy, off-white head. Complex aroma of rhubarb, lemon, plum compote, pepper, straw, wet grass. Taste has sweetish plum, apple, earthy & herbal rhubarb, straw & pepper. Woody, dry finish, old hops, white wine & rhubarb. Medium body, oily texture, fizzy carbonation. Unusual Lambic, complex & refreshing.
