This blend is comprised of:
30% Barrel #6 - Funk-forward, not sour. Lots of hay and barnyard brett character
30% Barrel #9 – Tart, with mild funk and sweet port notes.
40% Barrel #15 – Very acidic with lots of vinous red wine notes. Previously held Merlot and was not rinsed.
Fields Forever used the same blend of beers as Ruby Continuum. The portion that was pulled off to become this beer was sent back into an empty barrel onto the strawberries and allowed to referment while being monitored carefully for the development of off flavours (strawberries are notorious for 4EP and 4VP, some nasty plastic/burnt rubber phenols). I wanted to acheive a brilliant aroma and flavor of freshly picked, ripe, berries - and as soon as the aroma and flavour was imparted the blend was removed from the fruit.
This blend is sealed with a cork under the cap to maximize cellaring potential. An additional fermentation took place in the bottle to carbonate and ensure longevity. Store in a cool, dark place with a consistent temperature for best results. It was released to Cellar Society members for pick-up in the Luppolo tasting room in November 2018.

Cumber, grass and tart citrus. Cloudy gold with almost no head. Lots of nice strawberry and sour notes with a nice strawberry note on the finish. Decent.

Tasting at Erik’s; corked bottle
Cloudy golden colour. Mild aroma, delicate, pleasant, with fruit (yes, strawberries), jam. Dry mouthfeel, moderate acidity, mild funky touch, mild juice but can't be identified as any fruit, lemon, some astringency in the finish. The finish is rather short.
Balanced, not very complex, but well constructed.

750mL bottle, pours a hazy pale golden orange with a small white head. Aroma brings out lots of honey, tart stone fruit, and overripe fruits. Flavour is along the same lines, with tart stone fruits, plenty of acidity, and fermented honey. Quite acidic and lacking much depth. Decent.

750ml bottle at Erik's. Pours a hazy golden with no head. Aroma is funky, some barrel and fruits. Taste is more prominent with strawberry notes. Moderate to high acidic. I would prefer less acidity. Ok.

Amber with a slight haze, and no head. On the nose, just a touch of pedio, and a sweet, jammy strawberry accent. No jammy anything on the nose. Just a big tartness and a light strawberry note. Assertive, maybe not as balanced as most of their others.
