Dreamscape is the second of six exclusive beers for the 2018 Cellar Society. It is the first single barrel beer released and came entirely from barrel #4 - a french oak cask from Jalisco, Mexico, that previously held tequila (and immediately before that, Californian white wine)
With Dreamscape, I wanted to give something really special to Society members. I found that this barrel had incredible depth and complexity, most likely due to the diverse collection of microbes that fermented it.
This beer is sealed with a cork under the cap to maximize cellaring potential. An additional fermentation took place in the bottle to carbonate and ensure longevity. Store in a cool, dark place with a consistant temperature for best results. It was released to Cellar Society members for pick-up in the Luppolo tasting room in November 2018.

Bottle. Hazy dark blonde. Thin head. The nose is quite buggy, lacto and brett, and there's a nice bit of tequila accent in there as well. This has a lot of lactic acid, some sweet malt and tequila influence. But overall it's quite tart. I find the bugs are more gentle on the palate - the brett at least - but the barrel lends a nice influence to the finish.

Tasting at Matt's
Cloudy blond colour. The aroma is very fruity, stone fruits, quite evident manure too. Aggressive acidity, but also smooth; it has a good fruity character, light botanical note that can be the tequila, astringent and sour finish.
There are some interesting elements, but it's also dominated by the acid.

Funky and soured with s touch of cheese. Clear gold with s small white head. Soured stone fruit with long finish.

750mL bottle, pours a hazy golden with a small white head. Aroma is fairly subtle on the tequila, with only a touch of the barrels, a little wild yeast, and gentle acidity. Flavour is fairly intense, with lots of tequila barrels, intense citric notes, and sour fruits. Somewhat enamel-stripping, but it works alright. Lacking the depth and complexity of some other Temporal offerings, but it's cohesive and balanced. Good stuff.
