Brewed with Pilsner malt, raw and malted wheat, and a touch of oats, and moderately hopped in the boil with a blend of Columbus, Centennial, and Calypso hops. Fermented in foedre with a blend of yeasts containing a traditional farmhouse saccharomyces strain and brettanomyces. This beer saw two separate additions of locally grown quince [and was] conditioned for about 10 months in total in foedre (about 6 months on quince) to allow for the yeast character to evolve nicely and the quince to really shine. Finally, we carbonated the beer quite highly before packaging to really let the aromas and farmhouse character pop. The resulting beer is really one of a kind. Bright, lemony, very slightly tart, with a lovely level of farmhouse funk/earthiness and a slightly pithy and appley character.

473mL can, pours a hazy peachy yellow with a small white head. Aroma brings out lots of wild yeast, rustic saison yeast, and citrus zest. Flavour is along the same lines, with citrus zest, rustic saison yeast, and light tartness. Wild and hay-like. Not bad.

This is quite pale, cloudy, almost a pinkish tone to it. Just a very thin head. Smells like it's going to be sour, with a light cherry note, maybe some autolyzed yeast sort of thing...like wonky funky...it's got some tartness, a light fruity accent. Tastes better than it smells.

Oxford Tasting, can
Cloudy blond colour. Interesting, multi-layered aroma; yeast character, Brett, stone fruit, light manure. Smooth mouthfeel with some residual sugar; strong yeast character, blending well into the mild acidity and fruitiness.
Very good.

Soured white grape and light lemon. Murky gold with a small white head. Funky and a touch of tartness with a long finish. Lots of funk, quite solid.
