Mixed culture barrel aged
We took our time with this one. Our 1000th batch brewed a while ago.
It’s a mixed culture wild ale we stashed & barreled until the time was right to release it into the wild.
Pleasantly tart, gently funkalicious & complex with hints of vanilla & stone fruit.

Can from the brewery, as "A 1000 X Yes"
Dark blond colour, hazy, with large bubbles and almost no head. The aroma of Brett is prominent, rustic, with light notes of oxidisation and Chardonnay, light fermenting hay, very light butter cookies.
Good body structure, although the mouthfeel is dry; nice biscuity malt base, bready, some yeast, light dough, and mild buttery note, similar to the ones found in Chardonnay barrels; the acidity is more evident in the front, less so in the end, where a delicate astringency blends with some Brett notes, and stone fruits.
Very interesting beer.

Taster at the brewery. Pours a a bit hazy blonde with a white head. Aroma is very pleasant with lots of funk and barrel notes, quite fruity. Taste is similar with low to moderate acidity and some creamy notes from the oak. Nice one.

Draught @ Alibi Room. Hazy with a medium head. Fruity and light brett, fruity, complex.

On tap at the Alibi Room, pours a hazy blonde with a small white head. Aroma brings out bright citrus upfront, with a touch of oak, and a touch of funk. Flavour is very bright and complex, with a nice citrusy brightness, medium funk, and gentle acidity. Little bit of cheesy funk. Well-refined, with a citrusy and lightly acidic finish. Very good.

Draft - Soured and some funky lemon citrus. Bubbly clear gold with a rich white head. Sour and sweet lemon with some light cheesy funk. Interesting.
