Brumalia is a blonde wheat ale that was fermented with a house mixed culture in oak barrels, where it continued to age for over a year. It was then transferred into oak puncheons on top of massive amounts of Saturn Peaches from our good friends at Hollingbery & Son. After secondary fermentation on peaches, it aged for a number of months in oak before blending and bottling. Refermented in the bottle with Brettanomyces.

Little bit of haze, maybe some dull straw. There's a fair bit of brett with a fresh pale malt character. Quite rich wood. This has a really bright peach character, lots of brett, moderate tartness, light sweetness. Quite woody towards the finish. Lots of complexity. Typical amazing Holy Mountain.
