Affectionately named after our wonderful furry companion, Lou is our interpretation of a historical Witbier. Brewed with a grain bill made up almost entirely of malted and unmalted wheat; Wickup wheat malt from @meccagrade and organic raw hard red winter wheat from @cedarislefarms, this beer was decoction mashed and lightly hopped with Saaz. Lou was gently spiced in the kettle with Grains of Paradise and open fermented with a diverse mixed culture in our 500L open top puncheon before being moved to stainless for a brief maturation period and refermented in the bottle. We get lots of yeasty sourdough, fresh cut grass, and lemon peel from this zippy little beer. We want to drink this everyday, and we hope you do too.

Cloudy pale blond color. Nice aroma of coriander. Light and weak, no Wit character, light acidity, bit of wood or brett, weak final. Delicate beer, but too little going on here.

Hazy blond color. Smells like an American Saison, the body is thin, some astringency, but very boring overall, and the high carbonation is unpleasant in these cases.

Bottle - Light sweet lemon. Cloudy gold with s decent white head. Estery and yeasty bready notes.

Pale blonde, hazy, with a thin head. The aroma has some pedio, a bit of pale malt, but not actually much happy in there. There's a soft pale malt, with a little bit of sweetness. Has a touch of spiciness, but that's mellow, too. It's not hitting for me - wit is a tough style to land at the best of times; funky wit? That's high degree of difficulty right there.

500mL bottle, pours a cloudy golden with a small white head. Nose is very grainy, with dry toasted grains, wild yeast, and dry biscuity notes. Flavour is very grainy and dry, with light oak, wild yeast and tons of dry toasted grains. Dry, grainy and very oaky. Nicely constructed.
