3 Fonteinen Hommage is the result of macerating hand-picked whole sour cherries and raspberries on young lambic for at least four months, in a proportion of 760 to 800 grams of raspberries and 200 to 240 grams of sour cherries per litre of lambic. This fruit lambic is then blended again with more lambic to obtain a minimum intensity of 35% fruit. Hommage is a bodied raspberry lambic beer, with an intense deep red forest fruit bouquet. This unfiltered and unpasteurised lambic is all-natural with no artificial juices, syrups, or sugars added.

21 August 2021. At Gents Bierfestival. Cheers to the Ghent beer crew! 18/19, blend No° 57. Hazy red, no head. Strong aroma of raspberry, unripe strawberry, lemon peel, sour cherry, sour plum, vinegar, grapes. Taste has very sour plum, raspberry & lemon acid, funky straw, softly lactic-yoghurty but leaning more towards sourdough. Tart, acidic, fruity finish, very sour red fruits, plum, some woody tannins with an earthy rhubarb note. Medium body, oily texture, soft carbonation. Very complex, rich in fruitiness with the right amount of 'wildness'T. Excellent.

Man dat spul is iets aan de te zure kant, fruitigheid is wel lekker, maar je slokdarm krijgt het wel even verduren..

375 bottle from Lambik-O-droom, bottled June 17, 2020. Sipped away along with my old man, August 31, 2021, at the Tangla Hotel's terrace, Brussels, in a white wine glass, watching the sun set down beyond the Woluwe-Saint-Lambert windmill. That was an evening to remember. This is a very interesting lambic, much more so taking into account that a couple days earlier, on our visit to 3F, we had the 2014 Framboos, and you can draw some comparisons. To begin with, I thought this was going to be a minor experience compared to that, but in no way: they were quite similar. I know this was much younger and the bottle was half the volume, but the hype surrounding Framboos is kind of unfair towards Hommage, IMHO. This is a headless, cloudy, vermillion-hued lambic with some orange glittering and evident bubbles. Aroma is quite intense: acacia gum, cider, wild berries, apricot stone, balsamic vinegar... Wow. Mouthfeel is bone dry, light and tart. Bitterer than expected, leading to an ages-long finish with renewed dryness and sourness. Amazing (and it had only aged for a year in the bottle. Wait till I get my hands on an older one.)

Raspberry, funk, acid, sweet raspberry, bright berry jam notes, blackberry, barnyard, red wine vinegar, tannic, bright funk rather than barnyard, thyme, vanilla, oak, biscuit, lemon juice, berry finish. Medium body with a creamy carbonation. Phenomenal.

Bottle at home. Deep red with quick fizz. Loads of jammy rasberries in the aroma, some cherries and marzipan too. Taste is very sour. Raspberry balsamic, tart cherries and red currants. Too sour for me.

Red with little white head. Rich cherries and marzipan, some metallic/blood iron-like note, warm hay funk. Over medium sour with sweet raspberry fruity tip. Lots of mineral, medium body and average carb.// Ooh! More raspberries by the minute! 😍
