Saint Thomas (brewed for our friend Tom Harley of Holland & Harley Construction) is a single hop American IPA showcasing Mosaic Hops from the Yakima Valley in Washington, using all domestic pilsner malt from the pacific north west, and San Diego Super Yeast from White Labs. Living up to the name "Saint Thomas," this beer opens up with a barrage of freshly made tropical fruit salad. Honeydew Melon, citrus, fresh green grapes and hints of under-ripe pineapple. The pilsner malt is clean with just slight hints of graininess, letting the hop character dance all over the palate, and finish with a clean and refreshing note of freshly cut ruby red grapefruit.

Tap. Pours clear golden, small white head, some lacing. Aroma is dank, potty, tropical, mango. Flavor is light sweet, light bitter, dank. Light body, bits of lingering bitterness.

Tap at Capitol Beer in Sacramento, CA. Pours gold with a white head. Aroma is fruity/floral. Med body. Flavor is hop forward, mixed tropical fruits and floral. Seems like mosaic and citrus. Very tasty, finishing bitter.

On tap at Gourmet Haus. Very similar to all of their IPAs....which means this is tasty, citrusy with tropical fruit and a backbone of pine. Hazy orange with modest white head.
