Saint Thomas (brewed for our friend Tom Harley of Holland & Harley Construction) is a single hop American IPA showcasing Mosaic Hops from the Yakima Valley in Washington, using all domestic pilsner malt from the pacific north west, and San Diego Super Yeast from White Labs. Living up to the name "Saint Thomas," this beer opens up with a barrage of freshly made tropical fruit salad. Honeydew Melon, citrus, fresh green grapes and hints of under-ripe pineapple. The pilsner malt is clean with just slight hints of graininess, letting the hop character dance all over the palate, and finish with a clean and refreshing note of freshly cut ruby red grapefruit.

16 oz. can, pours a cloudy blonde with a small white head. Aroma is loaded with pithy tropical stone fruits, especially pineapple, piney hops and biscuity malt on the underside. Flavour follows accordingly, with lots of pineapple and other pithy stone fruits, followed by assertive piney hops, and just enough biscuity malt. Pleasant astringency on the finish, with plenty more of tropical fruits. Excellent.

On tap at the brewery. Aroma is very hop forward with a great mosaic character and a light cracker malt backbone. Lots of tropical fruit notes of mango, papaya and melon. Light citrus notes. Pours a bright, clear golden color with a small, moderately thick, white head that recedes to the edges where it lingers for a bit. Flavor has a light sweetness with a medium light cracker malt note. Moderate hop flavor switch pineapple, mango and papaya. Lighter notes of citrus and melon. Medium high bitterness with a touch of a resinous note. Light alcohol notes and a touch of resin. A bit of a lingering sweetness with tropical fruit hop notes. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a nice mosaic IPA. Lots of hop character with a nice balanced malt profile and sweetness. Hops could be more dominant, but this is well balanced.
