For our flagship cider, we kept it simple and local. Newtown’s and old world cider apples from the Double Mountain Orchard are pressed and fermented on a house yeast strain. We gave it plenty of time to dry out and develop wondrous aromas of juicy pear, lychee, green fruit, and chamomile. It finishes tart, crisp, dry, and quenching.

Hazy pale yellow body. Strong apple aroma. Dry apple taste with a bit of nuttiness. All apple finish.

Pours a slightly hazy pale yellow straw from a bottle. Nose is not much, a little funk like a fresh apple should have. Flavor is remarkably close to the description, I'm somewhat amazed at the lychee and chamomile notes. I'd actually like a little bit more, it's rather underplayed. Good, dry cider.

On tap at the PDX location. Pours a clear yellow color with a small bubble of fizziness. The aroma is mostly woody oak and light apple. Smooth, not too sweet, some fresh apples, tannins similar to oak dryness. Quite nice.
