Our ice cider is made by freezing, then extracting the sweetest essence of apple juice from the ice. The high sugar juice undergoes a long, slow ferment, creating a still dessert cider that walks the line between cider and brandy. Enjoy chilled, with or without food.

Medium clear gold body, aroma is faint musty apple. Taste is sweet, soft apple, nothing else. Smooth and warming finish. Clean but uninteresting, nothing stands out, apple character seems to have been distilled out.

Tasting at Matt’s

Blond color, even pale. The aroma is a bit closer to a true Ice Cider than the flavor; it has a moderate apple flavor and moderate acidity. I wonder if this has been brewed with sugar added. But it’s quite nice.

Bottle - Lots of sweet rich peel without the harshness. Pale clear gold. Bitter peel and a some acidity. Not that great for what it is.

Light gold. There is a sweet apple nose, touch of brown sugars. This has a sweet apple start, picks up a nice acidity in the finish. Nice structure, good ice cider.

375mL bottle, pours a clear dull golden. Aroma brings out treacle toffee, caramel apples, and some vanilla. Flavour is a bit phenolic, with treacle toffee, caramel apples and some perfumey alcoholic notes. Fairly phenolic, but warming, with a low-to-medium sweetness for an ice cider. Lovely stuff, but not quite on the level of Quebec ice ciders.
