Light in colour and refreshingly dry. Aromas of pepper, clove and allspice. This Belgian style saison is brewed with wildflower honey, which lends a pleasant floral note to the flavour, balanced with a crisp hop bitterness.

Golden orange body and okay foam. Very faint grain sweetness on the nose. Taste is sharp sweet grain, honey probably, ends crisp with good carbonation. Slightly rustic and sweet, not bad.

Bootl - Sweet almost bready notes with some fruity Belgian yeast. Clear gold with a decent white head. Dirty and bitter sweet notes. Not pleasant.

Figures the one brewery I’ve seen a bear at has an apiary. Hazy, golden. There isn’t much head. The aroma has a little bit of "Belgian" to it, with some spicy pear notes, but there’s also those gluey/bubblegummy phenols in the background, which shouldn’t be there. On the palate, it’s dryish, a bit dusty with the yeast character, and light pear notes. The biscuity malts are fairly strong, but I’m not getting anything chewy or cloying, which is good. Phenols are more subdued on the palate as well. Touch of dryness in the finish.

Golden color, clean. Strange smell, some stale biscuits, light flowers, maybe honey. Dry mouthfeel; sharp flavor of toasted almonds and almond cookies, but also with a sharp metallic edge, too much bitterness, some chicory in the final, and a very light sourness.
For me, this one failed.

On tap at 12 Kings Pub, pours a clear pale golden with a medium white head. Aroma reveals rustic farmhouse notes and a touch of honey. Flavour is similar, bringing out rustic farmhouse notes upfront, with fairly highly attenuated honey and a slightly citrusy tang on the finish. Nothing overly special, and not the best from Persephone, but it's well-brewed. Decent.
