The Quetsche Tilquin à l’ancienne is a spontaneous fermentation beer obtained from the fermentation of destoned fresh purple plums (Quetsche véritable d’Alsace, close to the Damson) in a blend of 1 and 2 years old lambics for a period of 4 months. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 3 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon.
The taste is slightly tart but also fruity and round which makes this Quetsche à l’ancienne may be more accessible for non-experts or less sophisticated palates. It also has a slight dryness from the skin of the plums. The nose perceives a plum brandy perfume.

Bottle. Vintage 2016-2017. Color: Hazy orange-red. Taste: Medium sour, slighty tart and moderate sweet notes, fruity, notes of brett, bit vinuous. Hints of plum, wood, lightly earthy hints. Over medium body, soft carbonation. Well balanced sourness, some complexity. Nice one.

Fles 37,5cl thuis. Wrang, zuur, pruim, fruittonen, droog, hout. Heerlijk subtiel zoete ondertoon, redelijk complex. Fantastisch. 9,92/10. (10-5-2018). 2016/2017 zacht. (5-6-2021).

Huge thanks to Erzengel for sharing! Beer in the glass orange-golden, small head. Sourish-fruity aroma. Starts intense sourish, notes of some fruity, apple, pear, apricot. Mild sweetish hints. Finish well balanced sourish. Nice.

Bottle at the 11th Brugge beer Festival, Brugge, Belgium. A hazy amber/red coloured pour with a thin white head that vanishes very quickly. Aroma is funk, tart berries, wine. Tastes quite tart, berry fruit, sour, slightly mouth puckering acidity. Not really my style but this was well made and I reckon it would be great on a hot day rather than a freezing cold day in northern Europe.

Flaska från SB. Vintage 2016/17. Snyggt orangerosa/persikofärgad, knappt något skum. Syrligt med toner av persika, stenfrukt, tropisk frukt, plommon, vinäger, citronjuice och stall. Denna batch näst intill slät kropp, väldigt låg kolsyra. Ska bli intressant att jämföra med äldre flaska.

Bottle @ home. Hazy peachy to red colour with no head. Smells fruity, red fruits, yoghurt, sour, dusty. Tastes sour, red fruits, yoghurt, cherries. No carbo, medium body.
