The Quetsche Tilquin à l’ancienne is a spontaneous fermentation beer obtained from the fermentation of destoned fresh purple plums (Quetsche véritable d’Alsace, close to the Damson) in a blend of 1 and 2 years old lambics for a period of 4 months. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 3 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon.
The taste is slightly tart but also fruity and round which makes this Quetsche à l’ancienne may be more accessible for non-experts or less sophisticated palates. It also has a slight dryness from the skin of the plums. The nose perceives a plum brandy perfume.

750ml bottle share at 2. Bielefelder Bierfest. Slightly cloudy, brass colour with with small, bubbly white head. Tart-ish vinegar aroma, some fruit acid but no fruity flavours. Taste is sour, vinegar sourness, fruit acid, no hints of plum, a minimally funky and woody touch.

Bottle labeled 2016-2017, alsace version. Pours pink red orange. Sweet and tart aroma of blood grapefruit. Citrus and strawberry sweet and tartness, smooth and sweet mouthfeel. Hardly any carbonation.

Fles thuis geprobeerd. Het is een donker not oranje geel bier, geen schuim. Het heeft een zure fruitige smaak, met hints van pruim.

Aus der Flasche (bbe 2026-01-19) mit Alsace Pflaumen im Muted Horn Berlin 2017-08 getrunken. Das ist so ein perfektes Lambic, das es fast schon wieder langweilig wirkt. Fluch und Segen zugleich. Leider hätte ich mir ein deutliches Pflaumenaroma gewünscht. So war hier leider nur eine nicht definierbare Fruchtsäure erkennbar.

Surprisingly smooth like snake skin. Hazy pink pour without much head or lacing. Grapefruit bretta and a touch of pepper. Tap at Churchkey.

07.08.2017: 0,75l from bottle shared by me at a Party. Vintage 2015/2016. BB 02.02.2026. Amber hazy color, almost no head. smells cheesy, earthy, musty, funk, green apples, barnyard, nice smell, not much fruits though. medium to full body, no carbonation, slick mouthfeel. tastes earthy, grassy, peppery, some funk, barnyard, citrus, some wood. finishes dry and lightly sour with notes of barnyard, grass and citric notes. very good one, rather dry and acidic but overall still very nice, unfortunatly fruits not very noticeable and I would prefer some carbonation. 7, 4, 8, 3, 16

750ml bottle, picked up in a trade. Vibrant, dark orange. Soft haze. No head. Nose has sawn wood. Wet leather. Cheese cloth. Plum stone. Prune. Some vanilla oak. Smells fantastic. Taste has a fruit sweetness. Gets fairly sour and lightly acidic. Bit of lemon juice going on. Feels light and cleansing on the palate. Soft carbonation. Some citric burn on the way down. Really easy drinking for style. Just the right side of sour.

Bottle at Verzekering. Pours cloudy pinkish amber. Aroma is funk, prunes, fruit. Body is medium, lightly tart and sour, with a healthy prune throughout. Fruity sweet, soft carbonation. Lingering prune but rather dry palate. Good!
