The Quetsche Tilquin à l’ancienne is a spontaneous fermentation beer obtained from the fermentation of destoned fresh purple plums (Quetsche véritable d’Alsace, close to the Damson) in a blend of 1 and 2 years old lambics for a period of 4 months. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 3 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon.
The taste is slightly tart but also fruity and round which makes this Quetsche à l’ancienne may be more accessible for non-experts or less sophisticated palates. It also has a slight dryness from the skin of the plums. The nose perceives a plum brandy perfume.

750 ml bottle, thanks to Willrunforbeer on the share. 2014 vintage. Aroma is acidic with a mild sweetness that I perceived as fruit. (without reading the description of the lambic)
Flavor, is barnyard / hay, over ripe fruit, weak grass notes. The sweetness starts, it becomes tart with a pucker, but the fruit comes back and makes it sweet again. Plum is notice by me as fruit but never would have guessed plum. Overall, pretty impressive.

Shared bottle at Mi2 Extended at Cardinal 06.06.16. Muddy straw colour. Small head. Exceptionally sour aroma and taste of citrus, brett and hay. Very refreshing.

Sample from 750 ml bottle at ASKO-messe. Cloudy golden colour, small white head. Aroma of lemons, sour plums, farmhouse and dust. VERY sour flavour, lemons, sour plumskins and brettanomyces galore.

Bottle (from etre gourmet), 2013-2014 vintage. Pours slightly hazy golden. Aroma is sour, funky, vinegar, slight onion. Flavor is sour, fruits, lemons, apples, plums, acidic notes, vinegar, slight sweetness. Overall: very good.

(Bottle) Hazy amber colour with foamy, off-white head. Fruity, sour nose with notes of citrus, grapefruit, lemon, unripe yellow plums, stable and barnyard. Fruity, tart taste with citrus, grapefruit, lemon juice, green apples, plums, some bread, funky barnyard flavours and a dry finish with a solid, fresh tartness. Medium body, dry. Fresh, tart and well made lambic with a balanced plum character. Excellent beer in perfect balance.

2015 vintage. Poured into a taster showing dark apricot with no head or foam. Practically opaque. The nose shows a mix of strong notes of prunes, lemon, barnyard tones, and a lot of brett. The palate is moderately carbonated and light bodied. Alot of flavors here - peaches, light prunes, barnyard in the background, subtle funky brett notes here and there, and a strong tartness throughout. All flavors are harmonious apart from the slightly out of place overtartness.

Bouteille 375ml, gracieuseté de Beervana lors du CanBIF Spring 2015, Thanks Cameron! Couleur orangée opaque, absence de mousse à l’exception d’un mince anneau sur les parois du verre. Arôme de Funk, poussiéreux, étable, fruité. Goût de funk, bonne acidité, Brett fermier, prunes, peau de prune. Carbonatation moyenne-faible, corps moyen.

(Bottle, 0.75 l - BB 12/02/2025, at Pikkulintu, 20151210) The beer poured orange and cloudy. Its head was medium sized and white. Aroma had plums, tartness and sourness. Palate was medium bodied with medium carbonation. Flavours were plums, tartness, sourness, sweetness, wood and bitterness. Aftertaste had sourness, sweetness and wood. A nice lambic with plums that gave surprisingly pleasant sweetness.
