The Quetsche Tilquin à l’ancienne is a spontaneous fermentation beer obtained from the fermentation of destoned fresh purple plums (Quetsche véritable d’Alsace, close to the Damson) in a blend of 1 and 2 years old lambics for a period of 4 months. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 3 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon.
The taste is slightly tart but also fruity and round which makes this Quetsche à l’ancienne may be more accessible for non-experts or less sophisticated palates. It also has a slight dryness from the skin of the plums. The nose perceives a plum brandy perfume.

Bouteille 375ml, gracieuseté de Beervana lors du CanBIF Spring 2015, Thanks Cameron! Couleur orangée opaque, absence de mousse à l’exception d’un mince anneau sur les parois du verre. Arôme de Funk, poussiéreux, étable, fruité. Goût de funk, bonne acidité, Brett fermier, prunes, peau de prune. Carbonatation moyenne-faible, corps moyen.

(Bottle, 0.75 l - BB 12/02/2025, at Pikkulintu, 20151210) The beer poured orange and cloudy. Its head was medium sized and white. Aroma had plums, tartness and sourness. Palate was medium bodied with medium carbonation. Flavours were plums, tartness, sourness, sweetness, wood and bitterness. Aftertaste had sourness, sweetness and wood. A nice lambic with plums that gave surprisingly pleasant sweetness.

hazy golden to orange colour, minimal off-white head; aroma of balsamic vinegar, plum, wheat and some bread; taste is dominated by sourness with plum notes and peppery notes; really great lambic

375ml bottle. Light hazy golden-orange-amber color with off white head. Aroma is yeasty, funky, barnyard notes, wood, sweet and tart fruity. Sweet and acidic taste like aroma. Medium oily body with soft carbonation.

375 mL bottle from Wine Warehouse. Hazy amber, thin head. Aroma of funk, pepper, dry plums in the finish. The taste is tart jammy plum, bright citrus, tart and funk. Medium bodied, high carbonation, lingering tartness. Nice.

(375ml 2014 bottle from A la Biere Comme a la Biere) Pours very hazy peach colour with a tiny ring of bubbles and no lace. Aroma fruity with some plum skin, raspberry, lemon, lactic, oak, musty funk, mineral. Tart. Palate is tart and medium sour lactic, lemon juice and zest, herbs, moderately high oak, some pit fruit skin character, light musty vegetal funk. Dries in the finish and aftertaste with oak, dry earth, old hops, a bit funky, and here the plum comes out - the tart puckering skin and outer layer of flesh. That lingers in the aftertaste. Lightish body with almost no carb, slick. It’s tart and fruity without being nearly as fruit forward as most fruit lambics are, more like a "fruit gueuze". Has that lovely rounded Tilquin character. Drinks very nicely.
