The Quetsche Tilquin à l’ancienne is a spontaneous fermentation beer obtained from the fermentation of destoned fresh purple plums (Quetsche véritable d’Alsace, close to the Damson) in a blend of 1 and 2 years old lambics for a period of 4 months. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 3 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon.
The taste is slightly tart but also fruity and round which makes this Quetsche à l’ancienne may be more accessible for non-experts or less sophisticated palates. It also has a slight dryness from the skin of the plums. The nose perceives a plum brandy perfume.

(375ml 2014 bottle from A la Biere Comme a la Biere) Pours very hazy peach colour with a tiny ring of bubbles and no lace. Aroma fruity with some plum skin, raspberry, lemon, lactic, oak, musty funk, mineral. Tart. Palate is tart and medium sour lactic, lemon juice and zest, herbs, moderately high oak, some pit fruit skin character, light musty vegetal funk. Dries in the finish and aftertaste with oak, dry earth, old hops, a bit funky, and here the plum comes out - the tart puckering skin and outer layer of flesh. That lingers in the aftertaste. Lightish body with almost no carb, slick. It’s tart and fruity without being nearly as fruit forward as most fruit lambics are, more like a "fruit gueuze". Has that lovely rounded Tilquin character. Drinks very nicely.

Bottle at home, 21st June 15. Pours a rich silky, deep amber, slight haze. Aroma is funk, sour and fermented plum, some almond. Taste is funky, earthy, sour, plum skin and flesh, earthy, musty, sweet and sour. Very good refreshing sipper

Bottle. Pours a cloudy orange gold with small off white head that lasts. The aroma is strong plum, funk, prunes, citrus. Thin mouth, very tart, earthy, wood, plum, funky, light dry finish, really enjoyed this.

375 ml bottle from Tanakaya. 2013-2014 vintage. Poured into a snifter. Hazy deep amber golden color a small off-white head. Huge plum nose along with vinegar, wood, hay and pear. Quite tart with a nice fruitiness that wasn’t in the gueuze. The plum really stands out. Medium body with a average to soft carbonation. Tart finish that lingers, but isn’t intensely sour. A lovely beer.
