The Quetsche Tilquin à l’ancienne is a spontaneous fermentation beer obtained from the fermentation of destoned fresh purple plums (Quetsche véritable d’Alsace, close to the Damson) in a blend of 1 and 2 years old lambics for a period of 4 months. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 3 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon.
The taste is slightly tart but also fruity and round which makes this Quetsche à l’ancienne may be more accessible for non-experts or less sophisticated palates. It also has a slight dryness from the skin of the plums. The nose perceives a plum brandy perfume.

Bottle with a best before of 29/01/2023. Pours with very low carbonation, no real head formation. Deep strawberry hued body with medium-low clarity. Aromas are of plums, jammy, medium vinous, wet wood, rhubarb pie, mild brett, earthy, musty. Very fruit forward, mild skin tannins. Flavors are very tannic, huge jammy fruit, plum, light baby food. Acidity is medium and about as strong as the tannins. Medium funk, wet hay. Juicy. Low carbonation. Mild cheesiness. Lots of tannin, thicker body for a lambic. Could use quite a bit more carbonation to help with brightness and carbonic acid. Good, but I’d take the gueuze over this any day of the week.

Bottle at Delirium Café. First batch! Hazy amber liquid with medium off-white head. Aroma of barnyard, lemons, apples, bread, fruity funk and stone fruit. Nice! Taste is dry and medium sour with notes of lemons, apples and funk. Medium bodied with medium carbonation. Plums aren’t very prominent, but they’re definitely there. Nice lambic otherwise.

Nose is tarte fruit, light smoke, berry fruits, funk, barnyard, woody musty notes. Taste comprises grass, fleshy fruits, rhubarb, farmy, earthy, tarte citrus. Medium bodied, fine carbonation, great puckering finish pitched perfectly. Great stuff.

21.04.2013, 0,75l bottle shared with ClubGonzo & ej @ In de Verzekering tegen de Grote Dorst:
Mild fruktig lukt med preg av malt, humle, grapefrukt, plomer, gras, korn. Frisk fruktig smak med preg av malt, humle, grapefrukt, eplecidereddik, grøne plomer, syregras, høy. Middels bitterhet som set litt. Veldig god, men kanskje litt for fersk.

Picked this up from Dranken Geers, Oostakker, Nr Gent, Sat 25th May 2013. Consumed at home B/H Mon 27th May 2013 This was the 2nd batch reading the description above, so from what I read plummier but less exclusive, I can live with the additional plumminess over the rarity. It pours muddy brown, I did like to think that there was a slight mauve colour to this but that is just wishful thinking, no head atop. Aroma is fruity, funky and if you can smell sour then that as well. Wonderfully tart and with a tanginess and fruitiness that you get from something like a good ol’ English fruit crumble that uses something like rhubarb or similar to really tart it up, but I am not suggesting this has a rhubarb flavour, it doesn’t but the plums have that nice tart, tangy, challenging fruity bite, and I can get them in here. Lip smacker and a mouth awakener but with a slight thickness in the mouth and a late dryness, good stuff, in fact very good, Loz really liked it as well. Might have to get some more of these, they are going to be great in the summer. Marvellous! A7 A3 T9 P5 Ov18 4.2

750mL bottle at Moeder Lambic Fontainas, pours a cloudy orange amber with a large off-white head. Aroma of plums upfront, and a little citrus zest. Flavour is fairly tart, with loads of sour plums dominating the flavour profile. There is a bit of funk, and some biscuity notes buried underneath. The plums are pretty front and centre, with a moderate lingering tartness. Great stuff.
