Our very dry, crisp méthode champenoise style cider, made from tart varieties of organic Washington apples. Carbonated through secondary ferment, hand riddled on a wood rack and then disgorged one bottle at a time. We aim for bright apple notes, enduring bubbles and a clean orchard finish.

750ml bottle thanks to David. Pours out a crisp golden topped with a white head. Nose is apple spice some sweetness. Taste is more of the nice apple some soap and spice.

Bottle - Apple, tannin and some white grape. Clear light effervescent gold. Effervescent and a slight tannin with a dry finish. Great for a champagne replacement.

Sampled at Finnriver, pours a clear greenish yellow with a small bubbly white head. Nose brings out apples, medium sweetness, and champagne yeast. Flavour is yeasty and apple-y, with exceedingly high carbonation. Like a champagne with more sweetness and apples. Solid stuff.

Corked bottle at winery
Blond color with large bubbles. Fresh fruity aroma, similar to a Chardonnay but more delicate. The mouthfeel is very dry and a bit weak, less fruity and a bit winey, with mild acidity.

750ml bottle. Big expectations with the $25 price tag. 8 twists on the cage (instead of the traditional 6). Pours with an incredible amount of CO2, very fizzy looking pale hued body with a violent fizzy head. Aromas are of CO2, sulfuric apple, moderate esters. Mostly bready, dry, mineral and sulfur. Some rich grassy notes. Flavors are highly carbonic and very acidic. The balance is weird to be perfectly honest. Medium tannin, huge acid, medium low sweetness and nearly 4+ vol of CO2. To be honest, for $25 and change this is not the award winning cider that I am expecting. Very fizzy, lots of acid, medium tannin, mild ester and a lot of sulfur. Decidedly off dry. Honestly disappointed.

Cloudy yellow. Fresh apple character. Candyish and tart simultaneously - fun cider. Finish is appley and clean. Interesting stuff - I will want to investigate more.
