This slightly sour blonde is the result of a unique experimental combination of Brettanomyces Bruxellensis and Pediococus Cerivisae from Wyeast Laboratories.

(Draught at Monk’s Café, Stockholm, 8 Feb 2008) Pale orange colour with brief, white head. Acidic, fruity nose with apricots and mandarin. Sourish, tart, fruity taste with notes of mandarin and lemon. Very fresh for its sourness. A bit like a restrained gueuze. Nice and refreshing.

[Bottle - Thanks Ungstrup] Hazy yellow with tiny white head leaving laces. Aroma is slightly sour with citrus and flower notes. Flavor is mild sour with typical brett, grapefruit and yeasty notes. Very refreshing and nicely balanced. Could do with this on a hot summer day!

75 cL bottle, thanks to BierKönig. Pours hazy yellow to orange with a white head - leaves a nice and lasting lacework. Aroma is light citrus and a very mild note of horseblanket. Flavour is medium dry with a solid brett-citric/acidic flavour - yet it is nicely balanced, smooth and crisp compared to classic lambics. Light citrus fruity, mild yeast note and a little malt base too. Goes into a smooth and very controlled acidic finish. Clearly a quite approachable/drinkable lambic-like brew, so I thought....my wife didn’t - back to square one :)

Blind tasting at Papsoes place, another great session, thanks Henrik! Beer #22: Pours hazy yellow with a lacing white head. Dry woody and acidic aroma. Flavour is acidic and dry. Light citric. Light fruity note in addition. Dry acidic finish. Not good.

Short-lived white head, leaving pineapplejuice-coloured beer. Pineapple, a bit of horseblanket, cultivated parsley, a bit lactic. Lots of citrus, fatty acid esters, lactic acid, a bit of "wet mop" Wyeast Bruxellensis, ending a bit cheesy. Very citric, dry, with a tingling MF, not very well-bodied. Very remarkable beer. It might be beefed up a little bit in body, and some brewers suggest a serious trappist yeast for finishing... Thanks to Carlo & Urbain, and hooray!

Bottle at the Struise Farm, many thanks to Carlo and Urbain for giving me the opportunity to taste this.
Hazy, yellow body. White, fizzy head. Fruity nose of apples and citrus. Complex and well balanced aroma. Moderately sour, lightly sweet flavour with some bitterness popping up in the end. Quite complex beer and very well balanced. It has the same fruitiness of the Aardmonnik, but off course didn’t inherit it’s maltiness, which is ok for a beer like this. Very interesting and rafinated beer: although not as complex as a classic gueuze, it’s very pronunciated and clearly says where it stands for and that’s what I want from a beer: honesty.
