Our Trilogy series is designed to showcase the three core elements that shape every beer you drink.

From across the world, some of the true masters of these ingredients have come to join us at the Old Flax Store to pay homage to Hops, Yeast, and Malt. Each year we add a theme to the trilogy, whether it's geographical, the use of fruit or barrel aging, this family of beers will have common elements built into their DNA.

In the third year of our trilogy series that DNA is IPA.

Draft. A golden beer with a lazing beige head. The aroma has notes of citrus fruits, hops, and malt. The flavor is sweet with notes of malt, spices, exotic fruits, and oranges, leading to a bitter finish.

(Keg at Sori Taproom, 20190115) The beer poured golden and clear. Its head was medium sized and white. Aroma had fruitiness, toffee and spiciness. Palate was medium bodied with medium carbonation. Flavours were fruitiness, spiciness, sweetness, herbalness, malts and bitterness. Aftertaste was sweet, hoppy and bitter. A different and complex hoppy brew and also rather pleasant one.

On tap at The Fuggles Beer Cafe Tunbridge Wells. Clear gold colour lasting white head. Oh well that it quite sweet and full on. Very hoppy. Just a bit over the top in the abv. Slightly harsh bitterness. Not a light agile strong ipa. Just a bit like Kestrel super strength with hops. Even a bit sickly. Not for me.

On keg at Brewdog Lothian Rd. Appearance - murky orange with a small head. Nose - mango and orange. Taste - more orange this time, but still mango in there. Palate - light to medium bodied. Creamy yet tangy through the middle. Dry tangy finish. Overall - solid.

5th January 2019
Almost clear gold beer, good fluffy pale cream colour head. Airy palate, a little soft, reasonable fine carbonation. Soft and pretty sweet malts. A sweetish milky vibe, not quite Carnation milk but of that ilk. Sweet mango with pine and nibbly hop spice. Smooth finish. Curious DIPA. Touch of the Mango Lassi here. Quite drinkable nontheless.

Keg at brewdog Lothian road. Pours golden, nose is toffee, floral, musty veg, taste is juicy fruit, sweet, toffee.

Keg at The Farmer's Boy, St Alban's, Herts. A golden/yellow coloured pour with a medium white head on top. Sweet, fruity, pineapple aroma. Taste is very sweet, peach, pineapple, fruit salad. What went wrong here Northern Monk?!

Can from the Northern Monk Webshop. Amber/ggold pour with a white head. Nose of melon,dessert pear, banana toffee, pineapple. Pretty much the same in the flavour. Very sweet.
