Abscission is a 100% spontaneously fermented beer with grapevines, fallen leaves, spicebush, juniper branches, laurel and sassafras steeped overnight in the coolship as the wort chilled. It was brewed in February, 2016 when our wonderful friends Marika Josephson and Aaron Kleidon of Scratch rounded up a “winter harvest” from their farm, drove it to Texas, and added it to our coolship. The result is a beer unlike anything we’ve ever tasted before that’s uniquely tied to time, place and people.

Abscission is the scientific term for the process of leaves being dropped from a tree, as well as for a state of cell division. It comes from the Latin for “to cut away”.

Tap at TCBW. A bit hazy amber colour, medium-sized white head. Aroma is herbal, citrusy grassy, even a bit odd. Light-bodied. Lime, lime peels, lemongrass. Lime, citrus, tartness ....

Draft at Craft Brewed for CBC. Pours light champagne pink gold color with a finger of white head that lingers, then moves to the edges. Big ruby red grapefruit nose with rose petal and some spice aromas. Lingering tart grapefruit pith. Bright and citrusy. Fantastic stuff.
