Stille nacht, ook in Esen te verkrijgen bij De Dolle Brouwers, is niet alleen een prachtig bier, ook de naam is niet te evenaren. Stel u voor dat men in alle kerken ter wereld een bierlied zou aanheffen? Zo is het natuurlijk niet bedoeld!
Toch heeft een Kerstbier iets speciaals en mag er ietsje méér van verwacht worden. Ietsje meer zegt u? Een van de zwaarste densiteiten van het wort: 22°PL. De ambachtelijke brouwzaal kan een grote storting mout verwerken en men brouwt eréén brouwsel per dag, koking in koperen ketel met rechtsreeks gasvuur en afkoeling in het koelschip, ook in koper.
Er wordt enkel bellenhop uit Poperinge gebruikt. Witte kandij mietten zorgen voor de extra densiteit. De afkoeling gebeurt met een Baudelot-koeler en de gisting gebeurt in open koperen gistkuipen. De lagering duurt minimum een maand en het bier is nagegist in de fles.
Van dit bier wordt de bottledatum vermeld op de capsule.

Nice looking peachy orange, dense white head, plenty of sediment. Smell is Belgiany, honey, hint of citrus. Dense mouthfeel, but too much carbonation. Taste is honey sweet, with a light bitter at the end, touch of metal. Some light spice. Pretty good.

Clear orange blond beer, small creamy white head, little stable, bit adhesive. Aroma: very herbal, lots of oregano, weird, fruity notes, alcohol, very complex, earthy, some tobacco, quite som vinegar. MF: lively carbon, medium to full body. Taste: pretty sweet start, quite the alcohol burn, bit malty, some tannins, bit fruity, bitter and spicy. Aftertaste: sourish, lots of alcohol, red wine, tannins, sweet and sugary, some banana peel.

AROMA: layered sweetness of toasted sugars, caramel, candi sugar, sweet bread, candied orange & orange peel, lemon zest, floral honey, perfume, hints of elderflower, dried pear & pear candy/syrup, wheat bread & hints of bread dough underneath, mild clove, hints of sweet wax, dried fruits like raisins, apricots, baked banana, impressions of sweet pancakes underneath main aromas, dry herbs (subtle thyme); soft citrus tartness on the edges, hidden alcohol
TASTE: lively carbonation but not sharp, slick & slightly syrupy mouthfeel, medium body, fairly easy and dangerously drinkable for 12% abv; medium to medium-high sweet onset but not cloying at any time, candi sugar, caramel, sweet bread, dried pear, floral honey/perfume, cloves, impressions of butterscotch, tart apples compote, soft citrus like tartness but also sharp touch on the edges, very light hop character of dry leaves, old grass, herbs, light bitterness, soft spicy alcohol but not hot, medicinal or of putting, remarkably well hidden;
OVERALL: harmonious, sweetness is nicely cut by soft citrus like tartness and carbonation, spicy alcohol adds complexity and dries out the palate in nonoffensive manner; very enjoyable and deceptive classic from De Dolle Brouwers
