Saison brewed with honey, coriander & lemon verbena. Fermented with a mixed culture of classic saison yeast strains, wild yeast & bacteria. Post fermentation, the beer was conditioned in a stainless steel for 6 weeks, with its primary mixed culture. A third & final fermentation, completed this beer in a bottle. Pockets of Sunlight is a radiant saison full of crisp energy. Please cool before opening & pour with care, leaving sediment in the bottle.

500 ml bottle into tulip glass, 2017 vintage bottling. Foamed up a bit when I opened it. Pours slightly hazy pale golden/straw color with a 1-2 finger fairly dense and fluffy white head with good retention, that reduces to a small cap that lingers. Light spotty soapy lacing clings on the glass, with a moderate amount of streaming carbonation retaining the cap. Aromas of big lightly tart lemon, lime, peach, pear, green apple, white grape, coriander, peppercorn, white wine, hay, straw, herbal, grass, wheat, cracker, and white bread; with light honey, leather, musty funk, and herbal/yeast earthiness. Damn nice aromas with great balance and complexity of fruity/funky/spicy yeast, spices, and light-moderate pale malt/honey notes; with great strength. Taste of big lightly tart lemon, lime, peach, pear, green apple, white grape, coriander, peppercorn, white wine, hay, straw, herbal, grass, wheat, cracker, and white bread; with light honey, leather, musty funk, and herbal/yeast earthiness. Moderate yeast spiciness and light fruity/lactic tartness on the finish. Lingering notes of tart lemon, lime, peach, pear, green apple, white grape, coriander, peppercorn, white wine, hay, straw, herbal, grass, wheat, cracker, white bread, light leathery/musty funk, and herbal/yeast earthiness on the finish for a good bit. Great complexity, robustness, and balance of fruity/funky/spicy yeast, spices, and light-moderate pale malt/honey flavors; with a great malt/tart/spiciness balance, and zero cloying/astringent flavors after the finish. Light-moderate dryness from tart/spiciness and carbonation, increasing through the glass. Medium-high carbonation and light-medium body; with a very smooth, moderately crisp/grainy/sticky, and lightly acidic balanced mouthfeel that is great. Zero warming alcohol as expected of 6.5%. Overall this is an awesome saison! All around great complexity, robustness, and balance of fruity/funky/spicy yeast, spices, and light-moderate pale malt/honey flavors; very smooth, crisp, and pretty refreshing to drink; with the balanced tart/spicy/drying finish. Awesome well rounded Brett character for such a young saison. A really delicious offering.

Citrus and light pepper with a little wine like Sunday church. Golden pour with decent head. Tangy finish. Some grape. Tap at Churchkey.
