(Previous labeled Peach Lambic). We first began experimenting with Belgian-style ales in 2006, and fresh, whole peaches were selected as one of the first fruits to add to the sour beer that we had fermented for over eight months in white oak barrels. We use 7,000 pounds of fresh Indiana peaches from Huber’s Orchard and Winery in Starlight, Indiana, destoning the peach pits by hand before adding to the barrels. Peach is a fruited ale with gold and straw colors that shine upon pouring, and zesty amounts of carbonation. Fresh peach aromas meld with floral and wine-like notes. Wonderful peach flavors follow in the taste, accompanied by refreshing tartness with a dry finish and mouth-watering tanginess.

Unripe peach and plenty of grapefruit. Murky orange pour without much head. Very tart finish--a little mouth puckering. Some orange seltzer. Tap at brewery.

(Keg at Sori Taproom, 20190921) The beer poured pale golden and hazy. Its head was medium sized and white. Aroma had fruitiness, peach, tartness and wood. Palate was medium bodied and dry with medium carbonation. Flavours were fruitiness, peach, wood, tartness, malts, sourness and bitterness. Aftertaste was tart and bitter. A surprisingly nice tart brew.

500ml bottle. Hazy, yellow-ish golden colour with small to average, frothy, diminishing, minimally lacing, white head. Intense, fruity and funky aroma, notes of (overripe) peach, fermenting peach. Taste is sour, fruity, funky, tangy, slightly dry woody, notes of peach, fruit acid, some oak. Fine, prickly carbonation. A tad too sour for me.

Tao at Harry’s Hofbrau in Redwood City. Sour, grape must and peach aroma. Cloudy honeycomb with small white head that retains as a collar. Lemon peel and Sauvignon Blanc flavor with moderate low fruit.

750 ml bottle into tulip glass, bottled on 12/17/2017. Labeled at 6.4%. Pours moderately hazy golden amber color with a 2 finger fairly dense and fluffy white head with good retention, that reduces to a thin lace cap that lingers. Nice spotty soapy lacing clings on the glass, with a moderate amount of streaming carbonation retaining the cap. Aromas of big juicy/tart/tangy peaches, fruit skin/pits, almond, apricot, pear, lemon, lime, green apple, melon, white grape/wine, hay, straw, grass, vanilla, yogurt, oak, wheat, cracker, and white bread; with lighter notes of leather, musty/lacto funk, and yeast/oak earthiness. Damn nice aromas with great balance of fruity/funky/acidic yeast, peaches, oak barrels, and moderately wheat/pale malt notes; with great strength. Taste of big juicy/tart/tangy peaches, fruit skin/pits, almond, apricot, pear, lemon, lime, green apple, melon, white grape/wine, hay, straw, grass, vanilla, yogurt, oak, wheat, cracker, and white bread; with lighter notes of leather, musty/lacto funk, and yeast/oak earthiness. Light-moderate fruity/lactic tartness, fruit tang, and light yeast/oak tannin spiciness on the finish. Lingering notes of tart/tangy peaches, fruit skin/pits, almond, apricot, pear, lemon, lime, green apple, melon, white grape/wine, hay, straw, grass, vanilla, yogurt, oak, wheat, cracker, white bread, light leather/funk, and yeast/oak earthiness on the finish for a while. Incredible complexity, robustness, and balance of fruity/funky/acidic yeast, peaches, oak barrels, and moderately wheat/pale malt flavors; with an awesome malt/tartness and tangy fruit balance; with zero puckering flavors after the finish. Light-moderate increasing dryness from tartness, tangy fruit, and carbonation. Medium-high carbonation and medium body; with a very smooth, moderately crisp, bready/grainy/acidic/tangy, and lightly tannic balanced mouthfeel that is fantastic. Zero warming alcohol for 6.4%. Overall this is a fantastic American fruit lambic! All around outstanding complexity, robustness, and balance of fruity/funky/acidic yeast, peaches, oak barrels, and moderately wheat/pale malt flavors; very smooth, crisp, and pretty refreshing to drink wit hthe modestly acidic/tangy/drying finish, not overly lactic. Super jammy peaches with balanced Brett/Lacto complexity; great oak barrel presence and malt balance. A highly enjoyable offering and spot on style example.
