500 ml bottle into tulip glass, bottled on 3/28/2019. Pours slightly hazy/cloudy deep ruby red, light copper/brown color with a small fairly dense and fluffy khaki head with poor retention, that reduces to nothing pretty quickly. No lacing, some clinging bubbles on the glass, and a fair amount of streaming carbonation. Aromas of big sour/tart/tangy cranberry, cherry, raspberry, fruit skin, lemon, lime, red grapefruit, peach, plum, pear, apricot, green apple, currant, red grape/wine, oak, hay, straw, grass, caramel, brown sugar, brown bread, and toasted biscuit; with lighter notes of nuttiness, roast, oaken vanilla, peppercorn, leathery/musty/lacto funk, red wine vinegar, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/acidic/light spicy yeast, dark/bready/light roasted malts, and oak foeder notes; with big strength. Taste of big sour/tart/tangy cranberry, cherry, raspberry, fruit skin, lemon, lime, red grapefruit, peach, plum, pear, apricot, green apple, currant, red grape/wine, oak, hay, straw, grass, caramel, brown sugar, brown bread, and toasted biscuit; with lighter notes of nuttiness, roast, oaken vanilla, peppercorn, leathery/musty/lacto funk, red wine vinegar, and yeast/oak earthiness. Light-moderate lactic tart/sourness, Brett tang, and some yeast/oak tannin spiciness on the finish. Lingering notes of sour/tart/tangy cranberry, cherry, raspberry, fruit skin, lemon, lime, red grapefruit, peach, plum, pear, apricot, green apple, currant, red grape/wine, oak, hay, straw, grass, caramel, brown sugar, brown bread, toasted biscuit, nuttiness, roast, oaken vanilla, peppercorn, leathery/musty/lacto funk, red wine vinegar, and yeast/oak earthiness on the finish for a while. Fantastic complexity, robustness, and balance of fruity/funky/acidic/light spicy yeast, dark/bready/light roasted malts, and oak foeder flavors; with a great malt/tart/sourness, and tangy/spicy balance; with minimal puckering/astringent sour flavors after the finish. Fairly crisp finishing. Light-moderate increasing dryness from lingering sour/tart/tangy/spiciness after the finish. Medium carbonation and body; with a very smooth, moderately creamy/grainy, and acidic/tangy/tannic balanced mouthfeel that is great. Minimal warming alcohol for 7.5%. Overall this is a fantastic sour red/brown. All around fantastic complexity, robustness, and balance of fruity/funky/acidic/light spicy yeast, dark/bready/light roasted malts, and oak foeder flavors; very smooth, easy, and fairly crisp to drink with the modestly acidic/tangy/tannic/drying finish. Not overly lactic/tannic. Fantastic well rounded Brett/Bacteria complexity; with great oak foeder presence, and dark/bready malts against acidity. Mild residual sweetness with crisp acidic/tangy/tannic dryness. A highly enjoyable offering, and outstanding spot on style example as expected of the brewery.
