We've long talked at the brewery about canning our base beer, and we finally had an opportunity to do that this month! Conservatory is a 50/50 blend from our two foeders, one of which contains our golden sour base, and the other contains our house wild saison base. We simply blended the beer and canned it, so you can really taste our house cultures without any fruit or hops in the way.

Fairly cloudy and hazy golden coloured body with a very large, four to five centimetre tall off-white large-bubbled head that dies down quickly - pretty ugly and no lacing at all remains on the side of the glass at all. Aroma of super funky, soured, bretty, lactobilly and even spontaneous fermentation notes come out with some light blackberries, raspberries and oak notes along with a kick of peaches and caster sugar at the end - very nice in the nose and quite funky, of course. Light to Medium-bodied; Assertive effervescence; Strong funky and tart notes dominate up front that pucker the mouth and bring out a nice fruit and soured complexity to the palate with a dry malt and grain kick as well, but the oaky, cedar and dry foeder notes dominate the rest of this one. Aftertaste shows some funkiness of course, mainly from the soured and spontaneously fermented notes with a lot of fruit flavours drying out the palate with raspberries, lemons, tangerines, grapefruits and yes, pure vinifera grapes (white wine) coming through the end with a oaky, cedar note and some very light malts. Overall, a nice, complex beer with a lot of oaky, dry notes that sit above the foeder and soured, tart fruit flavours with a lot of room in the middle for the soft malts, light sugars and complex yeasts to roam as this ages. Great to sample and while funky, complex and deep, this isn't an amazing beer that everyone should sample immediately. I sampled this sixteen ounce, pint-sized can, purchased from Everyday Wines in Ann Arbor, Michigan on 02-August-2021 for US$5,50 sampled at my house here in Washington a bit more than 13 months later, at the start of this college football season, while a long way from Ann Arbor, still close in heart, on 05-September-2022.

16 ounce can into tulip glass, canned in 3/2019. Pours lightly hazy pale golden yellow color with a 1-2 finger fairly dense and fluffy white head with solid retention, that reduces to a minimal spotty lace cap that lingers. Minimal lacing on the glass, some clinging bubbles and streaming carbonation. Aromas of big tart/sour lemon, lime, orange, grapefruit, citrus peel/zest, peach, pear, pineapple, apricot, guava, strawberry, mango, melon, red/green apple, white grape/wine, oak, hay, straw, grass, wheat, cracker, and white bread; with lighter notes of peppercorn, oaken vanilla, leathery/musty/lacto funk, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/acidic/spicy yeast; and moderate pale/wheat malt, oak notes; with great strength. Taste of big tart/sour lemon, lime, orange, grapefruit, citrus peel/zest, peach, pear, pineapple, apricot, guava, strawberry, mango, melon, red/green apple, white grape/wine, oak, hay, straw, grass, wheat, cracker, and white bread; with lighter notes of peppercorn, oaken vanilla, leathery/musty/lacto funk, and yeast/oak earthiness. Light-moderate lactic tart/sourness, Brett tang, and yeast/oak tannin spiciness on the finish. Lingering notes of tart/sour lemon, lime, orange, grapefruit, citrus peel/zest, peach, pear, pineapple, apricot, guava, strawberry, mango, melon, red/green apple, white grape/wine, oak, hay, straw, grass, wheat, cracker, white bread, peppercorn, oaken vanilla, leathery/musty/lacto funk, and yeast/oak earthiness on the finish for a good bit. Amazing complexity, robustness, and balance of fruity/funky/acidic/spicy yeast; and moderate pale/wheat malt, oak flavors; with an awesome malt/tart/sourness, and tang/spiciness balance; with no puckering/astringent flavors after the finish. Fairly crisp/clean finishing. Light-moderate increasing dryness from lingering tart/tang/sourness, yeast/oak spiciness, and carbonation. Medium-plus carbonation and light-medium body; with a very smooth, moderately bready/grainy/acidic, and fairly tangy/tannic balanced mouthfeel that is fantastic. Zero warming alcohol for 6.5%. Overall this is an amazing foeder aged sour/wild ale! All around incredible complexity, robustness, and balance of fruity/funky/acidic/spicy yeast; and moderate pale/wheat malt, oak flavors; very smooth and fairly crisp/clean/refreshing to drink with the modestly acidic/tangy/tannic/drying finish, not overly lactic. An absolute perfect balance between their base golden sour and wild saison. Amazingly well rounded Brett, Bacteria, Saison yeast complexity; with a nice pale/wheat malt backbone against acidity, and solid overall oak presence. A highly enjoyable offering, and amazing style example as expected.
