Named after our beautiful neighborhood, The Hollow is our house pilsner brewed with our northeastern farmhouse sensibility. Growing hops requires a lot of work outside in the heat. And there’s no better beer to have after a day in the hop yard than a clean, beautiful pilsner. This beer is hopped with Brewer’s Gold; one of the five varieties grown on farm both for the delicate character it contributes in a clean snappy lager such as this as well as the success we have had growing the variety in our own hop yard.

Draught @ Armsby Abbey, Worcester, MA. Sweet, rustic and grassy with some honey, grainy malts and earthy notes. A bit too sweet and not very bitter.

Tap at Armsby Abbey, Worcester. Color is clear golden with medium white head. Aromas and flavors: Some fruits, grain, some honeyish sweetness and malts. OK.

Got in a trade with brutalfarce. 16 ounce can into lager glass, canned on 12/10/2018. Pours fairly hazy/cloudy pale golden yellow color with a 1 finger fairly dense and rocky off white head with great retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big lemon, lime, orange, wood, mint, citrus peel/zest, peppercorn, cracker, white bread, and herbal/floral/grassy earthiness. Damn nice aromas with great balance and complexity of citrus/earthy hops and moderate pale malt notes; with great strength. Taste of big lemon, lime, orange, wood, mint, citrus peel/zest, peppercorn, cracker, white bread, and herbal/floral/grassy earthiness. Light-moderate citrus peel/zest, herbal, floral, woody, grassy, peppery bitterness on the finish. Lingering notes of lemon, lime, orange, wood, mint, citrus peel/zest, peppercorn, cracker, white bread, and herbal/floral/grassy earthiness on the finish for a good bit. Great complexity, robustness, and balance of citrus/earthy hops and moderate pale malt flavors; with a great malt/bitterness balance, and no lingering hop astringency after the finish. Fairly crisp/clean finishing. Perfectly clean on lager flavors, with no fruity/yeasty notes present. Light-moderate increasing dryness from lingering bitterness and carbonation. Medium-plus carbonation and light-medium body; with a very smooth and moderately bready/grainy/sticky balanced mouthfeel that is great. Zero warming alcohol as expected of 5%. Overall this is an excellent German pilsner. All around great complexity, robustness, and balance of citrus/earthy hops and moderate pale malt flavors; very smooth, crisp, clean, and refreshing to drink with the mellowly bitter/drying finish. Very flavorful and not watery for the ABV. Great clean pils malt showcase, with balanced citrus/earthy hops. A very enjoyable offering. Hop profile was pretty unique, but still spot on stuff for the style.

Bottle. Creamy white good mostly lasting head. Yellow colour. Light malty and moderate hoppy aroma. Some citrus notes. Light bitter flavor. Short light bitter finish. Oily palate.

Pours light gold into a shaker. Bright white soapy head with medium medium retention recedes leaving spider lacing. Corn and biscuit aromas. Sweet corn and caramel front to back. Dry earthy bitter finish.

6 oz pour on draft at Snallygaster 2017 shared. Slightly hazy straw yellow with off-white head. Aromas of malt, corn, wheat. Tastes of citrus, hay, malt, wheat. Light body with a dry finish.
