Named after our beautiful neighborhood, The Hollow is our house pilsner brewed with our northeastern farmhouse sensibility. Growing hops requires a lot of work outside in the heat. And there’s no better beer to have after a day in the hop yard than a clean, beautiful pilsner. This beer is hopped with Brewer’s Gold; one of the five varieties grown on farm both for the delicate character it contributes in a clean snappy lager such as this as well as the success we have had growing the variety in our own hop yard.

500 ml bottle purchased at Redstone Liquors, Stoneham, MA. Pours a clear, yellow straw color with a nice white head. Aroma of grain, weak citrus as well as a weak grassy hops. Taste of sweet malts, grains and weak citrus. Light body with medium carbonation.
No telling how old the bottle is, I bet it would fair better on draft. Drinkable but comes off very weak overall.

Milk and Hops, bottle: pours golden with a white head. Aroma is biscuit, apples, grass. Taste is lightly bitter and somewhat sweet. Good, not great.

On tap at Ocelot’s 2nd Anniversary party, pours a clear gold with some fluffy, white head. Nose is true to style but also bright, grain, grist, grass, lemon, some honey. Flavor is super clean, lemon, straw, grist, biscuit, a peppery note at the end. Dry.

16.9 oz bottle from Half Time. Pours a clear, bright, golden color with a small, fizzy white head and mild, spotty lace. Grainy and grassy aroma with some nice herbal hop notes, lemon zest, and a bit of pepper as well. Drinks clean and a little bitter, mild malty sweetness. Lively carbonation, long tingly finish. Maybe a hint too much carbonation, but that's a minor complaint. Really nice, easy drinking, clean and pretty example of the style.

Clear, straw-to-beeswax yellow body is topped by a medium-sized, white head with moderate retention.
Grass and dry herbs in the nose add a good deal of zesty spiciness. No big citrus or any other out-of-place/out-of-style hop notes with lemon being the most citrus I get. And to be honest, it’s much more malt-driven of a pilsner anyways, with baked bread, honey, vanilla and strong cereal notes all entering in to the equation. No flaw or alcohol and a lovely grain and floral finish.
In the mouth it’s grain-forward with lots of biscuit and cereal character. Probably more cereal-like than most pilsners, but there’s certainly softer honey here as well, with floral and grassy hops adding spice and light bitterness. Moderate, engaging carbonation and a crisp, lightly malty texture with no flaw or alcohol. Good stuff, like the restraint and rather delicate nature here.
