Draft at 8 Degrees Plato. Pours a clear straw gold with a finger of white foam that dissipates. Light grainy nose with some light lemon zest and faint coriander notes. A bit thin on the palate, but easy drinking. A touch watery on the finish with light clove, wheat chaff and faint lemon.

12 ounce can into pint glass, no can dating. Pours moderately hazy medium golden yellow color with a small dense white head with good retention, that reduces to a thin cap that lingers. Nice spotty lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of lightly tart lemon, lime, orange zest, peach, pear, red apple, melon, coriander, thyme, peppercorn, wheat, cracker, and white bread; with lighter notes of banana, bubblegum, clove, herbal, grass, and yeast earthiness. Damn nice aromas with great balance and complexity of fruity/spicy yeast, spices, and pale/wheat malt notes; with great strength. Taste of lightly tart lemon, lime, orange zest, peach, pear, red apple, melon, coriander, thyme, peppercorn, wheat, cracker, and white bread; with lighter notes of banana, bubblegum, clove, herbal, grass, and yeast earthiness. Light herbal/grassy bitterness, peppery yeast spiciness, and wheat tang/tartness on the finish. Lingering notes of lemon, lime, orange zest, peach, pear, red apple, melon, coriander, thyme, peppercorn, wheat, cracker, white bread, light banana/bubblegum/clove, herbal, grass, and yeast earthiness on the finish for a good bit. Great complexity, robustness, and balance of fruity/spicy yeast, spices, and pale/wheat malt flavors; with a great malt/bitter/spiciness balance, and no cloying/astringent flavors after the finish. Light-moderate increasing dryness from bitter/spiciness. Medium carbonation and body; with a very smooth, moderately creamy/grainy/sticky, and fairly crisp balanced mouthfeel that is great. Zero warming alcohol for 5.5%. Overall this is an excellent witbier. All around great complexity, robustness, and balance of fruity/spicy yeast, spices, and pale/wheat malt flavors; very smooth, crisp, and refreshing to drink with the mellowly bitter/spicy/drying finish. Perfectly balanced Wit yeast, spices, and pale/wheat malts. A very enjoyable offering, and spot on style example.

The thyme, I think, is pretty apparent in the initial nose. American wheat beer will sometimes show a little spice in the nose, but this one offers the additional sidebar of Italian seasonings. It pours a bit cloudy, with a very puffy, white head. But the head settles down pretty quickly. The taste is kind of based on the wheat ale, but it has a bit more of German Weiss than and American 312-style ale. Put that down to the lemonthyme, which reminds me of the spiciness of a German Weiss, or even a Belgian witbier. I find it very tasty. Accessible to the newbie, but just different enough from regular styles.
