Pellicle, our unique version of a dark and delicate sour, spent over a year lagering in fresh oak barrels. This lager epitomizes the unique Brettanomyces yeast flavors alongside notes of raisins, plums, and spicy coconut. In addition to the rarity of the beer: it's wild and bottle conditioned, which means it will change and evolve over time if it's stored correctly.

22 ounce bottle into tulip glass, no bottle dating. Pours fairly crystal clear dark ruby/brown color with a 1-2 finger dense light khaki head with great retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big tart/sour cranberry, lemon, cherry, raisin, plum, fig, date, apricot, red/green apple, red grape, hay, straw, grass, vanilla, bourbon, coconut, toasted oak, caramel, brown sugar, toffee, and brown bread; with lighter notes of pepper, nuttiness, roast, leathery/musty funk, red wine vinegar, and yeast/oak/toasted earthiness. Damn nice aromas with great balance and complexity of fruity/funky/light acidic yeast, dark/bready malt, and bourbon barrel notes; with great strength. Taste of big tart/sour cranberry, lemon, cherry, raisin, plum, fig, date, apricot, red/green apple, red grape, hay, straw, grass, vanilla, bourbon, coconut, toasted oak, caramel, brown sugar, toffee, and brown bread; with lighter notes of pepper, nuttiness, roast, leathery/musty funk, red wine vinegar, and yeast/oak/toasted earthiness. Light-moderate lactic tartness and light yeast/oak spiciness on the finish. Lingering notes of tart cranberry, lemon, cherry, raisin, plum, fig, date, apricot, red/green apple, red grape, hay, straw, grass, vanilla, bourbon, coconut, toasted oak, caramel, brown sugar, toffee, brown bread, pepper, light funk/vinegar, and yeast/oak/toasted earthiness on the finish for a good bit. Incredible complexity, robustness, and balance of fruity/funky/light acidic yeast, dark/bready malt, and bourbon barrel flavors; with a fantastic malt/tartness balance, and zero puckering flavors after the finish. Very unique with this being a lager, clean finishing. Lightly increasing dryness from tartness and yeast/oak spiciness. Medium carbonation and body; with a very smooth, moderately creamy/silky/grainy, fairly acidic, and lightly tannic balanced mouthfeel that is fantastic. Zero warming alcohol as expected of 5.6%. Overall this is a fantastic dark sour ale! All around outstanding complexity, robustness, and balance of fruity/funky/light acidic yeast, dark/bready malt, and bourbon barrel flavors; very smooth, clean, and easy to drink; with the mellowly lactic/tannic/drying finish. This tastes very close to a Flanders Oude Bruin on style. Loved the amount of barrel presence for being a wild ale. Balanced dark fruity Brett complexity, dark/bready malts, and bourbon barrels. Not overly lactic, making this extremely drinkable. A highly enjoyable offering.
