Got in a BIF from Roguer. 22 ounce bottle into signature teku glass, bottled in 9/2016. Pours slightly hazy pale golden yellow color with a 1-2 finger fairly dense and fluffy white head with great retention, that reduces to a nice cap that lasts. Nice dense soapy lacing clings down the glass, with a moderate amount of streaming carbonation retaining the cap. Fantastic appearance. Aromas of big lightly tart lemon, peach, pear, apple, white grape, peppercorn, hay, straw, herbal, grass, white wine, oak, wheat, cracker, biscuit, light funk, and yeast earthiness. Incredible aromas with fantastic complexity and balance of fruity/spicy yeast, wine barrel, moderate pale malt, and light earthy hop notes; with great strength. Taste of big lightly tart lemon, peach, pear, apple, white grape, peppercorn, hay, straw, herbal, grass, white wine, oak, wheat, cracker, biscuit, light funk, and yeast earthiness. Light-moderate peppery yeast spiciness and light tart/tangy wine notes on the finish. Lingering notes of lemon, peach, pear, apple, white grape, peppercorn, hay, straw, herbal, grass, white wine, oak, wheat, cracker, biscuit, light funk, and yeast earthiness on the finish for a good bit. Incredible complexity, robustness, and balance of fruity/spicy yeast, wine barrel, moderate pale malt, and light earthy hop flavors; with a great malt/spiciness balance, and zero cloying flavors after the finish. Light-moderate dryness from carbonation and yeast spiciness, increasing through the glass. Medium-high carbonation and medium body; with a very smooth, moderately crisp, bready/grainy/sticky, and lightly tannic balanced mouthfeel that is awesome. Zero warming alcohol for 6.4%. Overall this is an amazing wine barrel aged saision! All around incredible complexity, robustness, and balance of fruity/spicy yeast, wine barrel, moderate pale malt, and light earthy hop flavors; extremely smooth, crisp, clean, and refreshing to drink. Amazing classic saison complexities with balanced wine barrel notes; nice bready malt backbone, with minimal residual sweetness. A highly enjoyable offering.
