We brewed an Amber Saison and then put it into fresh oak barrels and aged if for over a year. Each barrel was inoculated upon filling by adding a handful of fresh apple pressing that were fermenting with wild yeast that covered the apples. Each barrel soured and developed its own unique flavor and a truly wild blend was created.

22 ounce bottle into tulip glass, bottled in 8/2016. Pours crystal clear dark orange/copper color with a 1-2 finger fairly dense and fluffy off white head with good retention, that reduces to a thin cap that lingers. Light spotty lacing clings around the glass, with a moderate amount of streaming carbonation retaining the cap. Aromas of big tart lemon, cherry, raspberry, green apple, orange, red grape, pepper, vanilla, toasted oak, brown sugar, brown bread, hay, straw, leather, light musty funk, and yeast/oak/toasted earthiness. Damn nice aromas with great balance and complexity of fruity/funky/acidic yeast, oak barrel, and moderate dark/bready malt notes; with great strength. Taste of big tart lemon, cherry, raspberry, green apple, orange, red grape, pepper, vanilla, toasted oak, brown sugar, brown bread, hay, straw, leather, light musty funk, and yeast/oak/toasted earthiness. Light-moderate fruity/acidic tartness and yeast spiciness on the finish; with lingering notes of lemon, cherry, raspberry, green apple, orange, red grape, pepper, vanilla, toasted oak, brown sugar, brown bread, hay, straw, leather, light musty funk, and yeast/oak/toasted earthiness on the finish for a while. Fantastic complexity, robustness, and balance of fruity/funky/acidic yeast, oak barrel, and moderate dark/bready malt flavors; with a great malt/tart/spiciness balance, and zero cloying flavors after the finish. Light dryness from acidity/spiciness as well. Medium carbonation and body; with a very smooth, moderately creamy/grainy/acidic, and lightly tannic balanced mouthfeel that is awesome. Zero warming alcohol as expected of 6%. Overall this is an outstanding sour amber saison! All around awesome complexity, robustness, and balance of fruity/funky/acidic yeast, oak barrel, and moderate dark/bready malt flavors; very smooth and easy to drink with the balanced acidity. This has a lot of barrel presence and feels pretty close to a Flanders red overall. A highly enjoyable offering.
