Our Star Thistle Mead is our best attempt to pay homage to our beekeepers and all the work they do to provide us with such great honey to work with. We use the highest quality local honey supplied by Sleeping Bear Farms to produce a dry still mead to help showcase the potential of our northern Michigan honey terroir.

Shared by Jeremy D. at the January 2025 PS tasting, 1/11/24. Clear gold, moderate legs. Aroma of honey, thistle, herbs. Taste is honey, anise, lemon.

On tap at Oh Craft. Pours pale yellow. Sweet, floral, apricot, mango, heady, a little too perfumed. Oily body. Fine.

Great! Med honey sweetness; lemon/pear/apple/plum/grape/peach/anise/cinnamon/floral/herbal/earthy spice. Semidry finish; fairly acidic feel.

Small sample followed by "howler" draft pour followed by 750 mL bottle, all from the meadery taproom (not all at once!). Pours a still, clear pale golden, like a white wine. Aroma includes medicinal honey and biscuit. Fairly sweet honey flavor, medicinal herb and licorice. Overall has a honey herbal flavor. Quite good.
