Our chums at clapton craft were in the hunt for a rich American IPA and chose our sleepy woods to brew it in. We took Citra, for its unrelenting juicy and pithy tones, and Simcoe, because of its fire pine and stone fruit flavors. A generous amount of wheat in the malt bill provides a hefty body, and fermentation on London fog adds its own stone fruit esters and rounds off this delicious brew.

Can from Hoptimism. Aroma of stone fruit with a spicy piney steak. Hazy pale egg yolk yellow. Creamy white head. Initial dose of sour edged sweet stone fruit, before spicy light bitterness kicks in. Light-medium bodied. Slick. Average carbonation. Dry lightly astringent finish. Low key but drinkable. May reappraise it as it warms up...
