Coral is a cider fermented with native yeast and aged on lees 8 months.
We bring in strawberries just after they've been harvested, mill them in our apple grinder, and let them hang out in the cider with our indigenous microflora for another 6 months.
The nose is outrageously strawberry. The flavour is strawberry punch with a touch of salinity and the softest strawberry tannins.

02-08-20 // taster at muted Horn. Unclear golden. Cider with strawberry sweetness but balanced.

A hazed pinkish cider with aroma of sweet apple and strawberry jam, light acidity, light Epsom salts, very nice. In mouth, a nice mix of tart apples, fresh strawberry, light acidity and Brett, very nice and complex. On tap at Dominion city.
