We fell in love with Spanish Sidra years ago, and have been looking for something similar in our cidery for a while now. Given the fickle nature of natural yeasts, this proved more difficult than we thought. In 2018, one of our tanks tasted just right. Estrella has a pronounced lemon peel aroma, soft lactic character, minerality and restrained volatile acidity, all derived from a spontaneous ferment. Tart, refreshing, and so so elusive. Bottle conditioned.

(750ml 2018 bottle from the cidery webshop) Dolgo pomace bottling. Pours nearly clear pale straw with a small haze of white bubbles from a high pour. Aroma of lemon peel, bright pithy citrus, verbena, bright spring flowers, tart crab-type apple characters, lactic and very light acetic acid, soft tannin and spice. Flavour is bright but very soft tart lactic lemon with bits, acidic apple flesh and 'green' skin, some flowers, gentle yeast with a little Brett, hints of acetic notes, drying tart finish with a little yeasty dustiness but not on the level of some Spanish examples I have had. Lightish slick body with basically no carbonation. Feels fairly close in style to the Spanish versions as hoped, very nice summer beverage and an impressive bottling from Revel.

A hazed blonde yellow cider with aroma of tart apples, light Brett, light lactic notes, very nice and complex. In mouth, a nice sweet tart apples with light acidity, light Brett, light lactic notes, nice and smooth. On tap at Bar Lupulus.
