Prosthetic Conscience is a beautiful exhibit of how pears, hibiscus and brettanomyces can come together in a magical way. Pears are the most cantankerous fruit we've fermented, but their ethereal citrusy acidity and natural sugars sing when paired with light hibiscus astringency. After a lengthy oxidative ageing process and a few months to can condition, we're left with a juicy pink crusher that we absolutely love. Can conditioned. Contains hops.

(355ml can from the cidery webshop) Pours pale salmon/peach colour with a subtle haze and short lived white head. Aroma of pink grapefruit, floral hibiscus-strawberry vibes, slight tannins, moderate funky brett blanket, spicy pears underneath. Flavour is light tart and light sweet, pretty dry overall, citrusy florals, soft strawberries, base of Brett-funked pears, a little white pepper, good soft tannic astringency, lingering pear in the aftertaste, light oxidized nutty feel too. Light bodied, oily, rather soft carbonation. Nice refreshing interesting perry, close in complexity to some of the bottled offerings but more convenient in the can.

355ml can. (5.5% ABV) Pours a cloudy pale pink with a thin, fizzy, short lived, off white head that fully dissipates. Aroma of Brett, hibiscus, pear skin and grapefruit. Semi-sweet flavour of Brett, white wine, hibiscus, pear and grapefruit with a dry, slightly tart finish. Medium body with a smooth, oily texture and average carbonation. Nice complexity. An excellent Perry.

Keg at Brothers Beer Bistro, Ottawa. Cloudy pale orange, minimal head. Funky floral nose where hibiscus and pears combines for a grapefruit aroma. Mid dry with medium body and rounded, spritzy mouthfeel. Minerally and funky. Pears with a thin cover of cobwebs and tropical flowers. Brilliant stuff!

A pinkish grapefruit Perry with a very thin off white head. In aroma, beautiful Brett with light apple pulp, light grapeskins, musty notes, pleasant. In mouth, a nice sweet fruity mix Brett, light lactic notes, light pear notes, fruity esters, dry and smooth. On tap at Brother?s Beer Bistro.
