限定醸造シリーズ第62弾 (419バッチ目):ベルギーは醸造に関する伝統が息づく国です。継承されてきた醸造技術や醸造所自体にたいする敬意が感じられることは、訪れた方は肌に感じるでしょう。Cantillon、Dupont、Chimayの醸造所を巡ると、その何百年もの伝統の素晴らしさを垣間見ることができます。これらの醸造所には、一つのものを造り続け、それを極めるという暗黙のルールがあるようです。高い水準のものを造り続ける伝統に対する敬意は忘れてはなりませんが、その一方で、伝統に重きを置きすぎることで現在起こっている醸造技術の発展とは隔たりがあるということは彼らも認めざるを得ないでしょう。

私たち京都醸造は伝統的なベルギーのビールに、新しいスタイル、原料、醸造技術を取り入れて未知の領域に踏み込んでいます。「一期一会」や「毬子」のように、ベルギー酵母と最新のユニークでフルーティーなホップを組み合わせたり、「なごり雪」「深雪」のように、フルーティーかつドライな口当たりのものを造ったりと、ベルギーの伝統を新しい手法で用いる試行錯誤をしています。

今回の仕込みではまた新しい領域に踏み込みました。それも危ないくらい高い領域に。IPAというスタイルはベルギーでは主流ではないなか、私たち京都醸造は様々なベルジャンIPAに挑戦しています。そして今回は今までのものとは一味違います。“Tripel meets Triple IPA”をテーマに、アメリカで流行の強烈なトリプルIPAに、ベルギーの伝統的なトリペルを掛け合わせました。ホップを大量に投入するNE IPAにも負けず劣らず、今回のビールには欧州産のホップ(Tettnang, Saaz, Saphir)を贅沢にも14g/Lも加えています。その結果、伝統的なホップのハーバルな特徴がアクセントとなった、フルーティーかつスパイシーな酵母の香りが豊かな仕上がりになりました。そしてこれらの香りは、ふくよかで体が熱くなるようなアルコールの味わいとともに広がります。このビールはなんと、京都醸造のIPAの中では初めてアルコール度数10%に到達しています!

一口これを飲めば、気持ちよくなること間違いなしですが、羽目を外しすぎて何かやらかさないようにだけご注意くださいね。乾杯!

名前の由来:ベルジャンIPAファミリーは毬男から始まりました。アメリカ西海岸スタイルの個性をを強く打ち出した毬男は、おなじベルジャンIPAの定番である一意専心の兄貴のような存在です。そのあとすぐに、現在のアメリカのトレンドに合ったよりやさしくてひかえめな毬子を家族に迎えました。しばらくのあいだ兄と妹は季節ごとにみなさんの前に現れていますが、今回はめったに会えない親戚の毬太郎がベルギーからやって来ました。彼は出身であるヨーロッパに古くからあるホップの持ち味をしっかりもっているので、トロピカルでフルーティなホップに頼る必要がないことをアメリカナイズされた親戚たちに示しています。代わりに彼のとても高いアルコール度数はファミリーに存在感を与えています。日本人の伝統的な名前の付け方についてちょっと説明するならば、太郎というのは長男を意味する男性の名前で、ホップの花を表す日本語である毬花(まりはな)の毬を(きゅう)と呼んで掛け合わせています。わたしたちと同じように、みなさんも彼を暖かく家族に迎えてください。

The 62nd beer release in our "Limited Edition" series (our 419th batch): Belgium is a country steeped in brewing tradition, and anyone who has visited has surely noticed the reverence for the past in both the brewing techniques and the breweries themselves throughout the country. Touring Cantillon, Dupont, or Chimay makes it clear how little has really changed in the past several hundred years. There seems to be an unspoken understanding among these breweries that their purpose is to do one thing and do it well. While we love the high standards the Belgians have set for themselves when it comes to brewing, it is probably not too much of a stretch to assume that even the brewers themselves sometimes feel that all this focus on tradition means that some of the more recent developments in the brewing industry have passed them by.

Many of our beers here at Kyoto Brewing Co. explore this uncharted territory between where Belgian tradition stops and more modern styles, ingredients, and techniques begin. Whether it is combining the unique fruit flavours of modern hops with Belgian yeast (Ichigo Ichie, Mariko, etc), or balancing the fruity character of the yeast with its dry finish to create a more drinkable wheat beer (Nagoriyuki, Miyuki, etc), we are always looking for ways to use the traditional aspects of the Belgian brewing tradition in new ways.

With this release we have taken that ideology to a new level…a dangerously high level! While the IPA style is a relatively new concept in Belgium, we have played around with it quite a bit here in Kyoto, just never to this extent. Under the theme of “Tripel Meets Triple IPA,” this beer redirects a very modern style born in the extreme beers of America (Triple IPA) into a more traditional territory of the yeast driven flavours of Belgian Tripel. While the beer was generously hopped with only European varieties (Tettnang, Saaz, and Saphir), it was done so at nearly 14 grams per litre, a level normally reserved for NEIPA and other hop bombs more at home in the modern era. The result is a unique beer rich with aromas of fruit and spice from the yeast accented by the herbal character of the traditional hops. This is all underlined by the strong and warming 10% ABV, a first among IPAs here at KBC.

Once you have a sip of this unique brew we think you will agree that we let our hair down a bit on this one…hopefully it won’t cause you to stray too far out of your constraints by following suit and winding up doing something a little too crazy! Kanpai!

Naming: Our family of Belgian IPAs started with Mario, a brash and in your face American West Coast take on the style that acted like a bit of a big brother to our year round Ichii Senshin. Shortly thereafter, we welcomed Mariko, his softer and more demure younger sister, who is more in tune with current American trends. For some time now the family has been quite complete, but we have recently been blessed by a visit from a rarely seen member of the Belgian side of the family: Kyutaro. With one foot firmly planted in the old world hops from which he hails, he has shown his more Americanized relatives that one doesn’t have to rely on tropical and fruity hops to make one’s point. Instead, his incredibly high ABV is more than enough to make his presence felt throughout the family! For those unfamiliar with Japanese naming traditions, his name is a take on the alternative reading of Mari (Kyu) combined with Taro, the name usually reserved for the eldest brother. We hope you welcome him into the family as we have!

Tap @ Goodbeer Faucets, Shibuya. Golden yellow pour, some white bubbles on the top. Nose has light maltiness, Belgian yeast funk, some fruitiness. Tastes sweet, fruity and soft, light herbal bitterness in the background. Interesting mix of yeast esters, Belgian funk and hoppy juicy DDH feel. Fun beer!

KBC Kyotaro 10% Belgian Tripel IPA Lovely glowing orange gold with a wispy head and a rich yeasty orange aroma as well as white pepper spice once it warms. Full bodied and sweet fruity rich spicy Belgian Tripel flavor with herbal hop elements only joining the party in the finish which is fuller than KBC beers which tend to be very dry. I like it.

On tap at Ant'n Bee. Hazy orange with a small white head. Fresh with hops, citrus, pineapple and some notes of malt. The finish was quite bitter.

Tap at Japan Brewers Cup 2020. Nose is tropical fruits, bubble gum in a nice way, stone fruits. Huge fruity hops, spicy, cake, lemon, tropical fruits. Lovely and rich malts, very deep flavors. Excellent.

Smell of pineapple and something dangerous. Taste is good, but feels sneaky. Lots of booze hidden. Got that tripel thing but with a bit of pineapple again. Sweet. Nice, but this size is enough.
