Sunsets is a collab with our friend Tim Clifford of Sante Adairius Rustic Ales.
We brewed a lager and then experimented as we did as homebrewers with a precise matrix of Brettanomyces strains as we aged the beer in French Oak Puncheons. After 20 months in oak, we move in 18% of Oude Fermier to lean this lager / ale hybrid toward our individual Saison profiles. Sunsets was bottle and keg conditioned for 8 months with cultures from both breweries before sharing with you.

Bottle shared at the Beau in London tasting, last group tasting for 7 months - who knew, big thanks to Beau 11/03/20. Hazed golden orange with a good sized off white head. Nose is stoned fruit esters, mellow funk, modest brett, green berry tones, damp oak. Taste comprises tangy green berry must, lemon tinged straw, bretty pangs, damp wood, funk, barnyard esters. Medium bodied, fine carbonation, drying close with a balanced acidic kiss. Top notch stuff.

Bottle thanks to Brian. Pours a hazy yellow gold with medium white head that lasts. The aroma is strong citrus, funk, floral, oak. Thin body, apple, peach, funk, nice oak, very tart without over acidic, enjoyed this.

Bottle shared in London - big thanks to Beau. Pours unclear orange-gold with a foamy white head. Great stuff, rich peach, citric bite, a little ripening orange, nips of pale oak. Medium bodied with fine, massaging carbonation. Quenching finish, more citric tartness, peach, some white grape, soft dryness. Sound.

Bottle shared. Thanks Adam! Pours a mostly clear, bright straw gold with a full 2 fingers of white foam that dissipates. Lots of oak on the nose with lemon curd, pepper and apricot notes. As it warms cantaloupe and honeydew melon come out. Nice carbonation, oaky cream on the palate with more stone fruit and faint lychee. Smooth and very drinkable. Very nice.

750ml bottle at share.Pale hazy golden with a nice cap of head, fizzy. Tartness is evident from the start in the aroma, light grape notes. Taste brings with it a healthy dose of pucker, more grapes, lemons. Pretty sharp bite.
