Boozy, fudge, chocolate, and vanilla with copious amounts of barrel in this Russian Imperial Stout. Collaboration beer between Barclay Brewing, Ellison Brewing, and Watkins Brewing.

Three different stout recipes from three different brewers. We brewed the first batch and fermented with a very aggressive strain of yeast, San Diego Super Yeast. It took the ABV of the beer to the roof and left a rather dry and hot stout. We decided that we’d throw it in some Warehouse Liquors Store Pick bourbon barrels and see what would happen. Honestly, we weren't expecting much, but those barrels worked some magic. We tasted it at 24 months and it had transformed in such a great way. It was still hot, but it started to round out.

Meanwhile, Watkins and Ellison both brewed their recipes and sent them to barrels. Three years from the start of the project we blended all of them together to what is an incredibly nuanced, bold, and assertive stout. It’s one of the beers we’re most proud of.

22oz bottle pours out black topped with a small tan head. Nose is nice big roast malts bourbon barrel chocolate some heat. Taste is more of the nice sweet chocolate big roast malts a little vanilla and plenty barrel.

22oz bottle at the June DC Rate Beer tasting. Poured a very dark cola color with an off-white head. Aroma was big, creamy coffee notes. Flavor was big roast, vanilla, barrel.

22oz bottle, heavy wax, pours an oily dark brown, leggy. Big maple nose, coffee, malt, licorice, toast, vanilla. Huge flavor, port and bourbon and licorice, vanilla, maple. Full bodied, oily finish.

Roast and caramel. Very sticky. Black pour with ok head. Oily consistency. Bittersweet finish. Bottle.

Bottle thanks to Russell. Pours black with small tan head that lasts. The aroma is strong bourbon, wood, licorice. Slick body, licorice, chicory, roast, dark chocolate, wood, boozy finish, very nice.

Bottle shared at Blind Stout Share. Pours a deep brown to black with a small beige head that lingers. Big bourbon, fudge focused nose with cacao nib, milk chocolate and brownie fudge. Smooth and rich, decadent stout on the palate. Sweet but not overly so. Lots of wood and oak as it warms up on the nose and palate. Smooth finish with a velvet touch. Very impressed.
