A similar brewing process to lagers with the use of lager yeast is used in the production of Royal Extra Stout. Fermentation time is much shorter than lagers, and takes place at a higher temperature. Finings traditionally composed of isinglass (fish bladder protein) are designed for yeast removal used during conditioning (storage) prior to filtration. It is also gives the aphrodisiac connotation.

275ml bottle from some random bodega in Nassau enjoyed in the hotel room.
Inky black with a bubbly tan head that persists. Roasty licorice and hints of bitter chocolate and caramel. Fells like it might not be the freshest bottle, but tasty just the same.

The Stouts of the Caribbean are strong, sweet versions of their Irish ancestors. Strangely that in the Islands there are Lagers and Stouts - both complete opposite ends of the beer world - with very little if anything else available in between. Not bad for a Caribbean Style Stout although it's not quite the way I like my Stouts. I've had this in the USVI and Belize and both taste like the same recipe although the bottles/sizes are different in each place I've tried it.

Pours with very good dark beige foam and a very dark brown body. Smell is all tin and barley. Flavour is soft sweet chocolate, vague barley hints. Mouthfeel is a little cloying. An unspectacular macro lager, but drinkable if there's nothing else around. Bottle found in St. Kitts, label says it was brewed at Carib St. Kitts.

Bottle from Crab Hole Liquors. Black color, fluffy beige head. Dark chocolate aroma. Taste is metallic cocoa. Just misses.
