Together with Stillwater Artisanal we made a beer inspired by everyone’s favorite candy. We made a chocolate bar in a bottle. Then, we aged that beer in Speyside whisky barrels. Absolutely divine!

Sometimes beers happen from coincidence, or in this case coincidences. In October of 2016 we we’re up in Aberdeen to brew with Fierce Beer. Thanks to that visit we got in touch with a company that sells really freshly emptied whisky barrels. We ordered 10 Speyside barrels, almost on a whim. Had no real plans on what to put in them once they arrived. Then, in April of 2017, we had Brian Strumke of Stillwater Artisanal here at the brewery, together brewing what turned out to be our seventh (!) collaboration, Cocoa Cacao - an imperial chocolate stout. Just days before that beer was done the Speyside barrels arrived, and there we had it. Honestly, what better beer to pour in Speyside whisky barrels then a decadent imperial chocolate stout? Coincidental yet perfectly logical. Like life…. kinda.

Bottle to tulip.
Appearance: dark brown close to black in color with a one finger khaki foamy head which dissipated nicely to leave some light lace
Aroma: milk chocolate, light nuttiness, vanilla, some whiskey barrel, light caramel, toffee, coffee and a little bit of dark chocolate
Flavor: blends the prior noted aromas to a fine sweet to roasty and nutty to bitter quality; finishes malty, coffee and whiskey barrel-ish
Texture: medium bodied, great sipper, light smoothness but also some dryness
Overall: nicely done impy pastry stout worthy of coming back to.

(Bottle) Black colour with brief, beige head. Malty, roasted nose with notes of chocolate, wood, whisky, butterscotch, vanilla, toffee and coffee. Malty, roasted, vinous taste with chocolate, oak wood, Scotch whisky, butterscotch, toffee, vanilla, coconut, coffee and a mild cacao bitterness in the finish. Full body, really sweet. Smooth and creamy mouthfeel. Possibly a touch too sweet, but I guess that comes with the lovely whisky barrel ageing. Lovely beer!

Black as the most vicious cat. And a fine beige head on top Good intensity in the aroma. Loads of cocoa Balanced sweetness for a beer like this, and a fine mellow carbonation level Not to much speyside whiskey profile left in this one now. And that is good in my book Still a good complexity with chocolate, cocoa, dark malt and oak in the flavor [Bottle from Systembolaget in Sweden]

Keg at the Beavertown Extravaganza, day two, 09/09/2017. Jet black coloured poour. Aroma is big nutty peanut, waffle with maple, hot brown sugars, caramel .Flavour is composed of sugary sweet, nutty malts, peanut, maple. Palate is sweet and slick, oiy, moderate carbonation, lowish carbonation.

Bottle from Bine & Vine. Pours dark brn/blk with a slight tan head. Aroma of chocolate, smooth toasted malt and a touch of smoke. Full bodied. Almost sticky sweet, but heat helps combat that. There's chocolate, vanilla, coconut, smoke notes, and some wood that's not musty. Quite a melange of flavors. It is superb!

Draft pour at Dominion Wine and Beer. Poured a motor-oil black color, not a whole lot of head, some tan/brown head. Aroma is like slightly melted M&M's. Smooth whiskey. Chocolate, milk chocolate milkshake. Creamy. Woody character with a touch of vanilla. Really solid stuff.

16 ounce crowler into snifter, filled on 4/26/2019. Pours opaque dark brown/black color with a 1 finger fairly dense and fluffy tan head with good retention that reduces to a thin ring of lace eventually. Light spotty lacing clings on the glass, with a light amount of streaming carbonation. Aromas of huge milk/dark chocolate, cocoa, coffee, caramel, brown sugar, toffee, vanilla, cream, fudge, coconut, whiskey, toasted oak, brownie batter, roasted nuts, biscuit, and dark bread/crust; with light notes of licorice, molasses, raisin, prune, cherry, fig, date, peat smoke, char, leather, tobacco, and yeast/roast/oak earthiness. Minimal booze in the aromas as it warms. Incredible aromas with amazing complexity and balance of dark/roast/bready malts, cocoa, vanilla, coconut, and whiskey barrel notes; with big strength. Taste of huge milk/dark chocolate, cocoa, coffee, caramel, brown sugar, toffee, vanilla, cream, fudge, coconut, whiskey, toasted oak, brownie batter, roasted nuts, biscuit, and dark bread/crust; with light notes of licorice, molasses, raisin, prune, cherry, fig, date, peat smoke, char, leather, tobacco, and yeast/roast/oak earthiness. Very mild herbal, roast, char bitterness; and whiskey/oak tannin spiciness on the finish. Lingering notes of milk/dark chocolate, cocoa, coffee, caramel, brown sugar, toffee, vanilla, cream, fudge, coconut, whiskey, toasted oak, brownie batter, roasted nuts, biscuit, dark bread/crust, light dark fruit/smoke/char, leather, tobacco, and yeast/roast/oak earthiness on the finish for a while. Insane complexity, robustness, and balance of dark/roast/bready malts, cocoa, vanilla, coconut, and whiskey barrel flavors; with a solid roasted bitter/sweet and whiskey/oak spiciness balance; with no cloying, acrid, astringent flavors after the finish. Slightly increasing dryness from lingering roast/char bitterness and whiskey/oak spiciness. Light-medium carbonation and extremely full body; with a very smooth, creamy, silky, velvety, bready mouthfeel that was perfect. Light slickness, chalky roast, and whiskey/oak tannins lingering after the finish. Mild increasing warmth of 14%, with minimal lingering barrel booze after the finish. Overall this is an insane flavored imperial stout! All around amazing complexity, robustness, and balance of dark/roast/bready malts, cocoa, vanilla, coconut, and whiskey barrel flavors; dangerously smooth and easy to sip on for the huge ABV, with the mildly bitter/tannic/drying finish. Perfectly soft/silky feel. Insanely rich malts; with perfectly balanced cocoa, vanilla, coconut flavors; and barrel presence/integration. Not overly sweet/heavy from lingering dryness. A highly amazing offering, and world class dessert style example. One of the best I have had.
