Brett fermented IPA conditioned on pineapple puree and dried pineapples. The pineapple is a natural complement to the light tropical character of our house blend of brett strain.

Draft at Ginger Man. Hazy yellow pour with a nice white head and lace. Fruity and a little dry, reminiscent of sweeter grapefruit juice. Lightly funky. Clean. Somewhat muted. A little thin. Okay.

Bottle shared at OEC’s 2nd Anniversary, 6/4/16.
Lightly to moderately hazy, bright flaxen-yellow gold body is topped by a small white head with moderate retention.
Very minor pineapple in the nose, which is mostly juicy hops adding tons of fresh meyer lemon, mango and light grapefruit. It’s not resinous, and the brett is pretty mild, adding light lime and hints of hickory nut skin. Quite a bit more malt/grain apparency than I remember the base beer having, though that one does have a strong biscuit/cracker character. Add to that some light bread dough and a bit of honey and you’ve got a rather robust, encompassing nose with no alcohol or flaw.
The pineapple quite apparent in the flavor and while I know Kent Falls would use nothing but the most fresh, real pineapple, it still comes off a bit novel and candy-like. Not horribly so, and the rest of the beer is still well-made, with lots of strong wheat and biscuit notes, more sweet honey and tons of citrus from the hops. Quite juicy with moderate bitterness and good balance overall, but I don’t love the pineapple. Would rather leave it to the hops and brett to produce the more subtle pineapple notes, which they easily do, in most beers.
