Sometimes, when you are enraptured at a concert, you cannot - and will not - accept the end of the show. The show must go on! An encore must be played. Originally, I thought would only make an Abbey Single or perhaps a Belgian Style Pale Ale for Sixpoint. After providing samples of my first creation, the crowd demanded more. Bring it back! If someone demands you to bring it back, you cannot come with the same force and intensity as you did before. NO! You must elevate the intensity, and take things to a higher level. Enter the Sixpoint Encore. Our Belgian Dubbel pours a deep copper color with a massive, mousse-like head. In the aroma, expect a symphony of spices, toffee, chocolate, and banana. For the discerning enthusiast, see if you can pick up a whiff of noble hops. The Sixpoint Dubbel starts out sweet, but I intentionally raise the hop levels of this beer to keep it balanced. As this beer ages over time, the sweetness will overcome, but not before the hop bitterness challenges it to a long and respectful duel. Wow! Can it really be 8.2% alcohol? It’s so drinkable! The show must go on! Could a triple encore be in the works? MAKE SOME NOISE!

Location: Draft at Barcade - Brooklyn, 3/23/14, as Encore 2014 (Retired in 2006, now re-released as the final beer in Sixpoint's "Barcade Beer Project")

Aroma: The nose is Belgian yeast, banana, dark fruit, and some brown sugar
Appearance: It pours a murky reddish-brown color with an average sized beige head
Flavor: The taste is sweet and yeasty, plenty of banana, dark fruit, and some spice
Palate: The body is medium-plus, it is a little sticky, but not cloyingly so
Overall Impression: I thought this was a pretty nice beer, though maybe not the most balanced thing out there. Glad to have tried it.

Pint at Sunset Grille, 10/20/2005. Pours a dark brown/toffee colored beer, with some beige-copper tinges on the edges. Low filtration gives it a bit of haziness, but it settles out to a borderline transparent/transluscent opacity. Head is thin and quickly dissipating, with little lacing. Aroma of earthy brown malts, dry toffee, caramel and lightly bitter chocolate. Dates and figs, some hints of light yeast, Belgian influenced, it seems, but not terribly apparent. Flavor begins quite sweet, sticky and chewy of texture, with moderately dry chocolate fudge, raisins, thick caramel and bits of lingering cocoa. Gets dry and almost toasty/roasty on the end, with some fair hops bitterness coming in and a dirty, almost sourish yeastiness. It fights back and forth between brown-malt sugariness and moderately acidic notes of roast and earth. Too bitter/hoppy on the end, I prefer no hops apparency in a dubbel. Mouthfeel has chewy, almost a light chocolate fudginess, which is at first pleasant, but as it warms and breathes, the low carbonation turns it to borderline watery. Not terribly impressed by the yeast, which is far better represented and more elegant in the dubbels I have had from Belgium. I’m also very picky about this style though. Just feel that the balance and flavor profile is all off.

Cloudy dark red with a brownish tint, impressive frothy head - musty and spicy aroma that reminds me more of a weissenbock than a dubbel - sweet, but not cloying - hints of chocolate and dried fruit (prune, raisin) - finish thins out a bit, but this is solid - I think these guys make better products that Brooklyn does, and I look forward to watching this brewery grow.
