Old World Pilsner
After a trip to Pilsen (Czech Republic) last year, we began a pursuit of reformation and refinement of Mary, our German-style Pilsner. We began lagering a portion of Mary in a single French oak puncheon in our cooler. After nearly two months, the beer was moved to tank and krausened (as is all of our lager) with fresh fermenting beer in order to provide natural carbonation. After nearly 3 months of further conditioning and slow carbonation, we present you with a softened, refined, and elevated representation of Mary.

Finally! After years, the final Poetica I've been missing. Starting to think they weren't going to brew this one again!
Lovely mineral with dried herb and light pepper. Lush malts showing dainty honey and rich bread. Not too much acid and exquisitely clean with a hint of soft wood.
Really nice oakiness in the mouth. It's slightly more than subtle, and adds a good complexity to the rich, but still well-attenuated, honey-like malt. Good breadiness/richness to it with ample, balancing bitterness from the dried herb-like hop character. Maybe not quite the finesse of some of the others in the series, but it's a tour de force of flavors and extremely satisfying drinking.

On tap at FOFA. Pours golden with large creamy white head leaving sticky lacing. The aroma is toasted grain, grass, wheat, straw. Slick body, wheat, straw, biscuit, grain, nice crisp bitter finish, really enjoyed this.

Pours slightly hazy gold into a stein. Impressive bright white head with excellent retention does not recede as beer rises from the bottom. Biscuit and hay aromas. Soft with sourdough, hay and citrus upfront turning to crisp earthy hop in the medium length finish.

Poured from draft golden with full whitw head. Aroma is grains straw floral notes. Taste is soft nice balance well crafted.

Looks like Mary, smells of oatmeal, grass and cream of wheat. flavor is very much the same, it has this chewy texture to it, filling, could still do a liter of this one no problem. better than Mary but not by too much and I think Poetica 2 has this one beat.
