We took the very last New Hampshire apples that were available to us, which we had fresh pressed into apple cider. This fresh cider was delivered the day it was pressed to our Meadery, where we blended it with True Source Honey and let it ferment, then we let it age in freshly emptied Jim Beam barrels that our friends at Allagash Brewing Company were able to help us with. The aging process took over 6 months. The ending result is oh so heavenly and oh so cherished. It’s not the like any of the other honey apple meads that we make, its got an entirely new label design, that we feel show cases every little detail about how precious this sweet honey apple mead is.

375 ml bottle served in proper glassware, in a candle lit background. (No kidding we lit candles) thanks to Eric S. 2015 vintage. Vintage is 2015. Clear golden mead of course no head. Aroma is great! Smashed apples, mild sugar and just a hint of whiskey. Faint oak.

This MUST have batch variations. For the steep price of $29.95 I really was expecting much more whiskey barrel influence. It does display the apples with plenty of honey. It tastes just like Kurt’s apple Pie. Where is the oak? It’s smooth but so is the Kurt’s Apple Pie for half the price. Yeaaaaah.

pale yellow. Smells like apple juice. I don’t get the whiskey at all. The Whiskey does come through in the taste and it actually overpowers most of the apple.

I got this as a prize for placing in the mead category at NERHBC. Deep golden color with a smattering of bubbles on the surface as I pour into a glass. Sweet non descript honey aromas with a sharp apple on top. Light vanilla notes but very little in the way of oak or bourbon. Sweet honey almost cloying in the flavor with hints of apple and a light bit of alcohol. Little to no oak or barrel character. Thick body with a sweet sticky almost syrupy mouthfeel. Clean and flavorful, but very sweet and feels like it needs something to balance it or a hint more attenuation. Tannins maybe?

Bottle. Pours with a clear golden hued body with copious legs. Aromas are floral, honey comb, white pepper, buttery oak, maple, vanillin, apple skins. Alcohol. Very very sweet, buttery maple soaked corn bread. Some apple. Not enough tannin or acid to balance. Delicious but cloying.
