Saison Brett – Notre version d’une fermentation principale avec levures Saison et Brett L et Brett B 6 % vol.alc.
Weyerman . Bière type Saison fermentée avec des levures French Saison et Belgian Saison de Wyeast.
IBU env. 35 avec du Columbus 12,2 Alpha et du Simcoe 11,8 Alpha. Deuxième brassin à la recette identique
mais fermenté avec de la Brettanomyces 50 % Lambicus et 50 % bruxellensis. Fermentation à 22 degrés C. Ces deux brassins ont été assemblés après fermentation (2,5 Plato) dans une foudre. Nous allons recréer un système «Solera» entre cette foudre qui s’appropie la Saison Brett et les prochains brassins Saison.

Hazy golden with little white head. Aroma is lemon juice, lime, oak, grape skin, kiwi. Taste is quite sour with low carbonation. The sourness burns a bit while swallowing. Ok.

Bottle. Nose is pure brett, kiwi, papaya, joghurt, white grapes. Palate is white grapes, cherry joghurt, mango. Very nice!

Bottle 330ml. [ As Trois Dames Saison Brett ].Clear medium orange yellow colour with a small, frothy, fair lacing, mostly diminishing, off-white head. Aroma is moderate malty, pale malt, moderate hoppy, citrus - lemon, moderate yeasty, saison yeast, leather. Flavor is moderate sweet and light acidic with a long duration, grapes, citric, tart, leather, dry. Body is medium, texture is oily to watery, carbonation is soft. [20170930] 7-3-8-3-16

Bottle, 6%. Slightly hazy golden with off-white head. Aroma is malt, yeast, lemon, brett and fruit. Flavour is malt, brett, lemon, fruit, medium sweet, sour, citric, little vinegar, wood and medium dry.

Bottle @ fonefan tasting. Medium head with medium duration. Color is golden. Aroma and taste are lactose acid, fruits, brett, malt and hops. Nice sour finish.

330 ml. Bottle. Bottle states that it was aged for one year in the cellar of the brewery. Hazy orange, little in the way of head. Nose is sharp funk with fruity citrus fruit, raw lightly sour dough, heavy on citrus & the dough, interesting. Soft carbonation. Easy mellow puckering Vitamin C, basically no funk interesting, big nice sour with Vitamin C low puckering lemon, acidity, sour lemon candy, puckering oak, puckering green apple, faint vinegar mandarin,… Little carbonation + low puckering quality works well, makes it a real easy drinking great sour. I know that brett shouldn’t make it sour but this is way I taste, maybe they added something else or they got something from the foeders or my pallet is broken,… Either way, wonderfully drinking straightforward puckering fruity sour. A real nice one.
