Big Bad Baptista is inspired by traditional Mexican coffee, Café de Olla, which is served with cinnamon and piloncillo, an unrefined sugar. The Cinnamon adds another layer of complexity and accentuates the earthy character of Mexican Coffee, but more importantly, it captures the essence of a place and its culture.

Draft at High Side in Fairfax. Poured a pitch black pour with a small tan head. Aroma had a bit of an Almond Joy character. Roasted malts, chocolate. Coffee. Flavorful, juicy. Really smooth. Alcohol was very well hidden in this one.

Bottle, courtesy of Sinh4, 2017 release. Pours green peppers, coffee, cacao nibs, vanilla, cinnamon, spices, caramel. Body is heavy and strong, spicy, cinnamon, vanilla and cacao, present carbonation. A bit raw, without being classical. Good, but for a modern stout not great.

Bottle, many thanks Werckmeister! Unclear darkest brown color with beige head. Aroma is very aromatic fresh coffee ground, cinnamon, cocoa. Taste is cinnamon, fresh coffee ground, green peppers, chocolate, light vanilla. Silky mouthfeel with fine-bubbled carbonation. Very good!

Tap at Cap Tap. Pours dark brn/blk with a dark tan head. Aroma is chocolate, cinnamon and coffee. Med plus body. Flavor is chocolate, cinnamon, dark malt. Coffee gets a bit overwhelmed here. Not at all dry. Cinnamon spice moderates the malt. Have no doubts - this is very delicious. Chocolate/cinnamon? How not delicious?

Draught @ Freshcraft, Denver, CO. Smooth, spicy and roasty with some bourbon, oak, wood, cinnamon, chocolate and cocoa. Quite complex but surprisingly easy to drink.

Bottle shared at THT. Black with dark beige head. Massive cinnamon, coffee, roasted malts, dark chocolate, light sugary, earthy roast, dead leaves, light allspice. Over medium sweet and bitter. Almost full bodied. Wow, the cinnamon in here is very good. I’m loving it.
